Do any of you make anything with asparagus?

I'm trying to figure out some way of making a dish using asparagus... Not like a stir-fry or anything.. I've done that..

But, like something with pasta or anything else....

Asparagus Quiche

Original recipe yield: 2 - 8 inch quiche.
Prep Time:25 MinutesCook Time:35 MinutesReady In:1 Hour Servings:12 (change)

INGREDIENTS:
1 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
10 slices bacon
2 (8 inch) unbaked pie shells
1 egg white, lightly beaten
4 eggs
1 1/2 cups half-and-half cream
1/4 teaspoon ground nutmeg
salt and pepper to taste
2 cups shredded Swiss cheese

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C). Place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and cool.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Brush pie shells with beaten egg white. Sprinkle crumbled bacon and chopped asparagus into pie shells.
In a bowl, beat together eggs, cream, nutmeg, salt and pepper. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture on top of cheese.
Bake uncovered in preheated oven until firm, about 35 to 40 minutes. Let cool to room temperature before serving.

Asparagus Casserole:

3 (10-ounce) packages frozen asparagus, thawed and well drained*
3 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 1/2 cups milk
3/4 cup refrigerated shredded Parmesan cheese, divided
1/8 teaspoon salt
2/3 cup soft breadcrumbs
1 tablespoon butter, melted
1/4 teaspoon paprika

Arrange asparagus in a lightly greased 13- x 9-inch baking dish.

Melt 3 tablespoons butter in a heavy saucepan over medium heat; whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually add milk; cook, whisking constantly, until thickened and bubbly. Stir in 1/2 cup cheese and salt, and pour over asparagus.

Stir together remaining 1/4 cup cheese, breadcrumbs, 1 tablespoon melted butter, and paprika; sprinkle evenly over casserole.

Bake at 350° for 25 to 30 minutes or until thoroughly heated.

*3 pounds fresh asparagus may be substituted. Snap off tough ends; remove scales with a vegetable peeler, if desired. Cook in boiling water to cover 3 minutes, drain.

Yield: 12 servings

I never measure anything so I'll try my best to tell you this recipe. I say just make everything proportionate to how you want it to taste.
In a pan, saute purple onion, asparagus, yellow squash and ham(pre-cooked is best) in a little olive oil. When everything is almost cooked, add a little bit of orange juice (just enough to simmer for about 5 min). Serve with Jasmine Rice. I guess that is kind of like a tropical stir fry. I don't like squash or asparagus but I make it for my BF and he loves it.

I like to make asparagus omelets. I add a tsp of feta cheese, a sprinkle of parmesan chees,fresh basil, dry Italian herbs,x virg olive oil and cooked Uncle Bens wild rice ( if I have that on hand).

Here you go. Simple and terrific.

Throw the stalks into a bowl with some olive oil, kosher salt and crushed black pepper. Flip around so the stalks are coated pretty evenly and thoroughly. Throw those babies on the grill and roll so all sides get cooked. Maybe 10 minutes total.

They are really good that way.

I like asparagus. My mom puts cheese on hers. I can't master the cooking of it yet so I don't fool around

I usually cook asparagus with butter and garlic and put it in a bowl with cooked rigatooni and melted butter(mixed in) depending on what kind of veggies you like, add as many as desired but i put in steamed tomatos and peppers.

looks like you have alot of answers so i will not add mine, but I liked the asparagus quiche one!! also try typing in bisquick and looking into the impossible pie section. they have some asparagus ones.

Chicken breasts marinated in white wine and herbs, then grilled and served with steamed asparagus and hollandaise sauce.

INGREDIENTS:
4 skinless, boneless chicken breast halves
1/2 cup Chardonnay wine
1 teaspoon dried tarragon
1 packet dry hollandaise sauce mix
16 fresh steamed asparagus tips
1 cup shredded Cheddar cheese

DIRECTIONS:
To Marinate: Place chicken in a nonporous glass dish or bowl. Pour wine over chicken, then sprinkle with tarragon. Cover dish and refrigerate to marinate for 2 hours.
Preheat oven to broil/grill.
Remove chicken from dish or bowl, discarding remaining marinade, and broil/grill for 25 minutes or until cooked through and juices run clear.
Meanwhile, prepare hollandaise sauce according to package directions. When chicken is cooked, place 4 spears of steamed asparagus on each chicken breast and dribble with prepared hollandaise sauce to taste. Sprinkle with cheese and serve.
