Chicken Cordon Bleu II

Prep Time:15 Minutes
Cook Time:45 Minutes
Ready In:1 Hour
Servings:6

INGREDIENTS:
6 skinless, boneless chicken breast halves
6 slices Swiss cheese
6 slices ham
3 tablespoons all-purpose flour
1 teaspoon paprika
6 tablespoons butter
1/2 cup dry white wine
1 teaspoon chicken bouillon granules
1 tablespoon cornstarch
1 cup heavy whipping cream

Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.

Well, it depends on what you like, for instance, are you vegetarian? Can you eat pork? How many people are you cooking for? Are there any restrictions(like diabetics). Complicated I know, but (not you) some people who don't cook everyday don't realize how much thought goes into making a meal At least twice a day) is alot, 365 days a year,2 times a day can burn you out unless you can get different recipes all the time. If you like left overs how about spaghetti, with garlic bread (I like to add cheese on top, I get the already shredded with mozzarella and Cheddar,its good!!). Then get the prepackaged salad mix or slaw and then - TA-DA! Dinner! You can always get some sherbet or spumoni ice cream for dessert (since the meal was kind of heavy).I hope that will help.

APRICOT CHICKEN
Recipe by Rachael Ray
Prep: 10 minutes // Cook: 25 minutes // Yield: 6 servings

2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 pounds chicken tenderloins, cut in 1 /2 across on an angle
Salt and pepper
1 large onion, chopped
2 tablespoons cider or white wine vinegar
12 dried pitted apricots, chopped
2 cups chicken stock
1 cup apricot all fruit spread or apricot preserves
3 tablespoons chopped flat-leaf parsley, for garnish

Heat a large skillet with a lid over medium high heat. Add oil and chicken. Season with salt and pepper. Lightly brown the chicken a few minutes on each side, add onions. Cook 5 minutes. Add vinegar to the pan and let it evaporate. Add apricots and stock. When stock comes to a bubble, add preserves and stir to combine. Cover pan, reduce heat and simmer 10 to 15 minutes. Serve chicken with a sprinkle of chopped parsley.

If you are a steak and potatoes person..,one favorite I cook and everyone loves it..,You need a round steak..,any size..,a metal meat tenderizer,garlic powder,pepper,cumin,celery salt,or mrs dash is good seasoning,and a can of cream of mushroom soup. Season the round steak..,no need to measure just apply as much seasoning as you wish.Put flour on top of steak and pound the flour and seasonings into the meat..,do this on both sides.In a skillet,brown the meat in oil or butter which ever you prefer.Place the meat in a roasting pan..,with the pan drippings add a teaspoon at a time of flour and keep stirring..,add a little more season if you wish.To the pan drippings..,add the can of cream of mushroom soup and add a little water until the "gravy" is to the consistancy that you like.Pour the gravy over the meat and place in the oven and cook for 45 minutes at 275 degrees.The meat is so tender..,its a cheap meal and the gravy is super.Especially over homemade mashed potatoes and not boxed.

Italian Cream Lasagna
Takes 1 hour from prep to bake:
Crumble 12 oz Italian sausage and brown
Blanch Lasagna noodles (I use no cook from Barilla)
Put a small layer of sauce on bottom of baking dish then a layer of noodles. Spread softened cream cheese on noodles. Top with 1/2 of Italian sausage a little sauce and some cheese. Make another layer just the same then finalize with a layer of noodles and cheese. Sprinkle with parsley and oregano. Bake at 350 degrees till cheese is melted on top.

chicken and dumplings recipe
chicken breast 2to 3 flour2 cups. 1/3 cup baking powder. 2-3 teaspoons. 1/2 cup milk. preparation. cut-up chicken and barely cover with water. add1/2 teaspoon salt and simmer until meat is soft, when done remove chicken. mix flour, baking powder, 1 1/2teaspoon salt and shortening and milk to make dough stiff. roll the dough to about 1/3 to 1/2 inch thickness, and then cut in 1 inch sections coat with a little flour and add into boiling chicken stock. simmer for 30 mins. then add chicken and serve.

CHICKEN LO MEIN

3 boneless, skinless chicken breasts
1/2 pound snow peas
1 cup carrots, cut julienne style (thin sticks)
1 1/2 cups cooked spaghetti, break in half before cooking or chineese noodles (tomoshiraga somen)
1 1/4-2 teaspoons cornstarch
1 teaspoon sugar
2 teaspoons water
1/3 cup fat-free and reduced sodium chicken broth
1 tablespoon soy sauce or oyster sauce
4 cloves garlic, finely chopped
2 teaspoons fresh gingerroot, finely chopped
1/2 c bean sprouts (optional)

Cut chicken into small strips. Heat a large saucepan filled with water to boiling. Add snow peas, carrots and pasta. Boil for 5-7 minutes or until pasta is al dente. Remove from heat and drain. Mix cornstarch, sugar and water. Mix remaining ingredients and stir together with the cornstarch mixture.
Spray nonstick skillet or wok with cooking spray and heat over medium heat. Add chicken and stir-fry about 2 minutes or until chicken is white. Stir in broth mixture, add vegetables and pasta and continue to cook another 2 minutes.

VEGETABLE LO MEIN

3/4 pound fresh noodles
6 Chinese mushrooms, soaked in water
3 large celery stalks, cut in 3" lengths
2 bamboo shoots, chopped
1 cup bean sprouts
2 tablespoons oil
1/2 teaspoon salt
1 cup vegetable or chicken broth
1/2 teaspoon sugar

Boil noodles in salted water until just done, about 4 minutes. Drain well and rinse in cold water briefly.
Stir in a small amount of oil to prevent sticking. Stir fry the mushrooms, celery, bamboo shoots and bean sprouts in oil. Add salt and broth, oyster sauce and sugar.

Push vegetables up side of the wok and add noodles, stir to warm, then mix in vegetables.

Add a teaspoon of cornstarch mixed with a teaspoon of water if a thicker sauce is desired.
