Balsamic-Roasted New Potatoes:

Prep: 10 min., Bake: 45 min.

2 teaspoons olive oil
2 teaspoons minced garlic
1 teaspoon chopped fresh thyme*
1/2 teaspoon kosher salt
1/4 teaspoon pepper
2 pounds small new potatoes, quartered
3 tablespoons balsamic vinegar, divided
Vegetable cooking spray

1. Stir together first 5 ingredients in a large bowl or large zip-top plastic bag; add potatoes. Drizzle with 2 Tbsp. balsamic vinegar, and stir or shake well to coat. Arrange potatoes in an aluminum foil-lined jelly-roll pan coated with cooking spray.

2. Bake, uncovered, at 450° for 45 minutes or until potatoes are tender, stirring once. Drizzle with remaining 1 Tbsp. vinegar, and toss well. Serve immediately.

*1/4 tsp. dried thyme may be substituted for fresh thyme.

Yield: Makes 6 servings

preheat oven to 450
use 1.5 russet[ Idaho] potatoes per person- peeled
cut in 1/2 lenghtwise
lay each 1/2 flat and cut in 1/2 lengthwise again
,you will have something that looks like two large pickle spears lying side by side.
With the potato 1/2 still lying flat, make two equally spaced cuts across the mid-line so you wind up with six equal sized pieces
Repeat as needed
Rinse and dry on paper towels and place in a large bowl
add enough olive oil to coat , paprika , salt & pepper and whatever spices you like.
coat thoroughly using either your hands or a utensil -hands are easier and do less damage to the food.
Spread out in a SINGLE layer in a baking dish
cook for 20 minutes at 450 and then reduce your heat to 400 checking every 5 minutes thereafter whilst turning as needed

This recipe is from someones old Sicilian grandma. Quarter red skinned potatoes, add x virg olive oil, sea salt, fresh cracked pepper, fresh chopped rosemary, finely crushed garlic and the juice of 1 lemon. Toss the taters in these ingedients and roast at 350 degreess for 45 minutes or until golden brown.Note:It might take longer than 45 min.

Mediterranean Roasted Potatoes

preheat oven to 425 F,get 2lbs of new/red potatoes, peel & cut into bite-sized chunks, in a large bowl coat with olive oil, roast them in a 13 x 9 in baking dish, season w/ some garlic powder, bake uncovered for 35 minutes. squeeze a fresh lemon over the potatoes, top with fresh chopped cilantro and serve.

6 Medium potatoes
2 T Oil
1 oz. Good Seasons Italian Dressing (dry)
1 T Chopped fresh parsley

*Dressing, not mixed.
Preheat oven to 350F. Peel potatoes and slice for French fries. Lay out on paper towel, pat dry. Potatoes should be as dry as possible. Put potatoes in a large bowl and drizzle with oil, tossing to coat evenly. Lay in a single layer on a large baking sheet; sprinkle dry dressing mix and parsley over all. Bake 25 min, then flip over only once. Return to oven and increase temperature to 450F. Cook 3 to 5 min longer until potatoes are tender and start to brown.

Roasted potatoes need to be par-boiled for about 10 minutes, drained well and tossed with your favorite seasoning and olive oil before roasting. This way they will be tender and will brown and crisp all over. They are wonderful as is with salt and pepper, but a little minced garlic and fresh rosemary in the oil when you coat them will really make them shine. Use red, white or russet, just quarter the larger ones and make sure everything is coated well with olive oil. With the par-boiling the roasting will take about 30 to 45 minutes in a 400 oven..............sometimes, when I take them out, I sprinkle Parmesan cheese over all............delicious.

I use the recipe on the back of the Lipton Onion Soup box. It is very simple and you use the onion soup mix, 1/3 cup of olive oil (or whatever kind of oil you use) and bake about 5 or 6 medium potatoes for 35 - 40 min.

Dill potatoes

Red or gold medium/small sized potatoes, peels half way removed.
Lightly sautee a few chopped sprigs of dill with 4 tablespoons of butter. Place your clean potatoes in your baking dish, drizzle the dill butter over them. Cover with aluminum foil & bake on 375 for 30 minutes, uncover and bake/broil for another 30 minutes or until tender. Salt & pepper to your liking.

You can also subsitute rosemary, thyme & chives for the dill if you prefer. You can also substitute almost any other vegetable for the potatoes.

You can take about eight to ten potatoes peel and wash them and cut into cubes.Take one package of Lipton onion soup dry mix and a half cup of mayonaisse and mix together with cubed potatoes,put in a baking dish and bake at 350 degrees,until potatoes are fork tender,turning potatoes at least once during baking.
