These are a few recipies ive tried and love!

BLUEBERRY MUFFIN
Makes 14. Preheat oven to 375F/190C/gas 5. Sift together 275g (2 ½ cups) flour, 2 tsp baking powder, ½ tsp salt, ½ tsp ground cinnamon. Cut 2 ripe bananas into chunks, and puree in a blender. Add 2 eggs, 130g (3/4) cup soft brown sugar, 90g (1/3 cup) softened butter and 1 tsp vanilla extract and blend again. Pour this mixture into the flour mix, and stir well to combine. Gently fold through 1 punnet washed blueberries. Spoon the mixture into greased muffin tins and bake for 25 minutes until risen and golden brown. Cool in the tin for 10 mins, then put on a wire rack to finish cooling. The muffins keep well for 3-4 days in an airtight container. And, of course, they're the ideal size for lunch boxes.

BAKED APPLE
Heat the oven to 400F/200C/gas 6. Take one apple per person, wash, core and score around the middle with a knife-point. Stand the apples side by side in a small ovenproof dish. Stuff with a mixture of soft brown sugar and dried fruits and nuts, or to keep it really simple, just drop a knob of butter into each cavity, and pour over the juice of 1 fresh orange for every 2 apples. Bake for 20-25 minutes.

BAKED APPLE
Preheat the oven to 350F/180C/gas 4. Put 300ml (1 ¼ cups) apple juice, 4 tbsp dark honey, 1 cinnamon stick, 4 cloves and 1 split cardamom pod into a small pan, bring to the boil, stir and simmer for 2 minutes. Peel, halve and core 4 large eating apples, place cut side uppermost in an ovenproof dish and pour over the syrup. Bake for about 30 minutes or until fruit is soft. Serve with natural yogurt.

Autumn Fruit Torte
Apples, pears, figs, or plums are good in this simple cake. The batter forms a top layer that does not quite cover the fruit, allowing it to peek through the surface of the cake.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
1 cup sugar
1 teaspoon pure vanilla extract
4 tablespoons unsalted butter, melted and cooled
2 medium apples or pears, peeled, cored, and sliced into thin wedges
Confectioners' sugar

Recipe: Autumn Fruit Crumble





- Butter or nonstick cooking spray

Topping:

- 1/3 cup unsalted butter

- ¾ cup unsifted all-purpose flour

- ¼ cup plus 2 tablespoons quick rolled oats

- 1/3 cup coarsely chopped pecans

- 2 tablespoons granulated sugar

- 2 tablespoons light brown sugar

- 1/8 teaspoon salt




- ¼ teaspoon ground cinnamon

Filling:

- 3 Granny Smith apples

- 2 ripe Red Bartlett pears

- 2 teaspoons fresh lemon juice

- ½ cup dried cranberries

- 1/3 cup granulated sugar

- 1 teaspoon cornstarch

- ¼ teaspoon ground cinnamon

- Whipped cream or vanilla ice cream for serving

1. Preheat oven to 350 degrees. Lightly butter or spray a 9-inch square glass baking dish and set aside.

2. To prepare topping: Cut butter into pieces and put into a small saucepan. Melt and set aside until lukewarm.

3. In a bowl, combine flour, oats, pecans, sugars, salt and cinnamon. Add the cooled butter and mix with a fork to form crumbs. Set aside.

4. To prepare filling: Peel and core apples and pears; slice about ½ -inch thick and put into a bowl. Toss with lemon juice. Add cranberries, sugar, cornstarch and cinnamon, mixing gently. Transfer to prepared pan and sprinkle topping over the fruit. Bake on center oven rack about 40 minutes or until fruit is bubbling and tender and topping is golden. Serve warm with whipped cream or vanilla ice cream.

Simple things that let the fruit sing as itself. Stewed plums, stewed apple (to spoon over breakfast cereal). Rose hip wine, and elderberry wine. Apple crumble, and baked apple (core and fill with plum jam, then bake or microwave). Crab apple jam (spiced up with a little stem ginger). It's been a busy week! But not much can beat fresh fruit, especially pears.

French apple tart i.e. a rich egg-based thin pastry base topped with real egg custard, and a single layer of thinly sliced apples. Baked in the oven and a thin layer of caramelised sugar poured on top for extra scrumminess . . . then add some double cream

Yep its got to be crumble - Cherry and apple summit like that with a nutty crumble. Then served with a dollop each of custard and vanilla ice cream
