I am a Chef. I have been cooking for 15 yrs. She has not cooked for 30 yrs. She doesn't understand modren teckniques or styles. So everytime I try do do my job. She tells me to do it her way. Her way has been out dated for 15 yrs and doesn't meet health code. I have tried to explain to her, that things have changed. She still will not let me cook the right and correct way. The quality of my food and my job suffer. I am not pleased with old school Ideals that no longer have a place in the modren kitchen.

If you want your job, you had better not try to make your boss think that you know more than she does. Just do the job to the best of your ability and the right people will take notice. Maybe if she gets a written citation from the Health Department, she will see things your way. Some times it is hard to teach "an old dog new tricks." This sounds like your situation. Some old methods are "tried and true," but others have fallen by the wayside. Just wait until an inspector gets hold of her ways and writes her up. Then she will have to listen to the inspector. Both of you will have to do things the inspector's way.

Be diplomatic; instead of doing something and having her rein you back in, sit down and tell her NICELY your concerns. If there is truly a concern with health code violations, you are justified to bring them to her attention. Cite specific examples and state solutions to fix those problems. Most importantly, be tactful; the fact that she runs the kitchen offers her some due respect, you should stick by your guns, but you should appreciate that she will stick by hers.

If she doesn't listen, take it up with her boss (the food and beverage manager, the general manager, the executive chef, or the equivalent in your restaurant). Prepare to submit your complaints in writing. Again, tact and understanding is key here.

Finally, if all else fail, submit an anonymous complaint with your state's Board of Health. You are right to be concerned about the sanitation of your food, and you are being dutiful in reporting abuses. Let's just hope that your superiors will listen before you have to do that.

Show her two versions of the same meal. One that meets her standards, one that meetes health/correct/your styles. Blidfold her, and have her sample each one. Ask her to tell you which one tasted better. If she selects hers, she is either stupid, or she is lying just to prove she's right. If she selects yours, then tell her "That was the way I would have cooked the meal." Then see how she reacts. Yes, it's a little smart-aleck-y, but it's one of the best ways to prove your point. Otherwise, I think you should just find a new job or start your own business where you are the boss.

If your a chef of 15 years I am sure you can find a new job....give notice and tell her why...she's the boss for some reason, does she own the place? Your fighting a losing battle because she is the boss, she doesn't have to listen to you. Frustrating, I'm sure....but there are lots of jobs out there for people who want them!

If her way doesn't meet with the health code and you don't particularly like the woman (Which by the sounds of it, you don't), get health and safety onto it ot just leave and get another job or open your own restaurant if you've got the money...you're obviously a good chef!

Well a lot of people in a "power position" will absolutley not hear anything that can be done better than what they have already suggested, fact of life. The best thing to do is not convince YOUR boss you "know more", but to convince HER boss that she needs to update her techniques or find another job.

Tell her boss.Show them how good you really are.Prove how you can improve their business and thus make them more money.Chose your words carefully.Ask them to "try this" or "what do you think of this method".If she is the BOSS boss then look for another job,where your talents can be appreciated.Or find investors and open your own shop.Good luck.

you dont. all you can do is understand that she is the BOSS and if you dont like her rule you should wish her well and then move on and take your talents somewhere else in an effort to enjoy your work and the career that you chose. ur a chef. u should have success finding a new job, no problemo ( ^_^ ) good luck, MOFO

Chances are she is asking the opposite question right now too. It is going to be hard to change an old dog, because it invalidates what they think validates them.
The easiest route would be to look for new job. The hard route would be to learn her ways and slowly teach her your ways in hopes she sees them as new things she learned and in turn "teaches" you.

If the pay is good, and other than your boss, you like your place of employment, then work on the lady. Yes she is Boss, but she is also a person.

Make it seem like changing to your way of thinking, is her idea.

Women have been doing that to men for centuries :)
