my husband makes fabulous homemade burgers, as he is the chef I hope I get this right. He only buys lean Aberdeen Angus mince meat as it tastes sooo much nicer and simply adds garlic, finely chopped onion and a tiny amount of vegetable oil to bind the mixture. (I'm afraid I don't know exact measurements and I would say my husband wouldn't either he just guesses!)

Hand kneed the mixture and shape in to 'burgers'
hubby cooks them on a griddle pan but I guess you could grill them or pop them in the oven

Spicy beef burger

Preparation time less than 30 mins
Cooking time 10 to 30 mins

Ingredients
450g/16oz lean beef mince
2 garlic cloves, crushed
1 tsp tomato ketchup
1 tsp mustard
1 egg, lightly beaten
1 red chilli, finely chopped
1 small onion, finely diced
2 spring onions, sliced
handful basil leaves, chopped
olive oil for frying

Method
1. In a large bowl mix together the mince, garlic, tomato ketchup, mustard, egg, chilli and onion.
2. Dive in with your hands and mix until the ingredients are well blended.
3. Just before cooking, add the spring onions and basil to the mixture and divide into four patties.
4. Heat a little olive oil in a large non-stick frying pan and fry the burgers.
5. Turn them once only, cooking for about 5-6 minutes each side. (Alternatively you can cook them under a grill for the same time turning half way through.)
6. Serve with burger buns and salad.

OR......

Burger with mozzarella and courgette fries

Ingredients
For the burger
¼ red onion, finely chopped
150g/5½oz minced beef
salt and freshly ground black pepper
50g/2oz mozzarella
1 tbsp olive oil
For the courgette fries
½ courgette, cut into matchsticks
100ml/3½fl oz milk
50g/2oz flour
250ml/9fl oz vegetable oil

Method
1. In a bowl, mix the red onion with the minced beef and season with salt and freshly ground black pepper. Shape the mince into a burger, then insert the mozzarella into the middle of the burger.
2. Heat a non-stick frying pan. Add the oil and cook the burger for 4-5 minutes on each side, or until cooked through.
3. Take off the heat and leave to rest for 3 minutes.
4. Make the courgette fries. Dip the courgettes in the milk, then coat the courgettes in flour.
5. Heat the oil in a heavy-bottomed saucepan. It is ready when a breadcrumb that is dropped in will sizzle gently in it. (CAUTION: hot oil can be dangerous. Do not leave unattended.) Place the courgettes in the hot oil and deep fry for 4 minutes until golden. Remove with a slotted spoon and drain on kitchen towels.
6. To serve place the burger on a plate and serve the courgette fries on the side.

Sorry, but I'm a bit of a purist: add nothing, repeat NOTHING, to the (good quality) minced beef steak. Grill (chargrill is best) on high heat on both sides (turn once, or twice at most) until done to your liking (my preference is for medium, which is juicy and tasty). Only then season with salt and pepper, this way you get the aroma of freshly ground pepper, and the salt won't draw out the meat juices during cooking. Serve immediately. All the rest (onions, sauces, etc.) you add only to the finished burger.

One acceptable variant is a cheeseburger, where you add a thin slice of Monterey Jack, Emmental, etc., on top of the patty immediately after you've turned it for the last time, and allow the heat to gently melt the cheese.

The finest and Welsh Black Beef sirloin steak , minced. Lightly fry onions and chopped celery, finely chopped garlic in olive oil. mix in the mince with the fried ingredients.Add salt and pepper and I use a beefburger maker its like a press made out of plastic , bought from betaware , or somewhere like that. I find that the fat from the steak and oil from the onions etc bind it together without the use of an egg.Served with homemade chips and burger in a bun with Stilton cheese, lettuce and greenhouse tomatoes..mmmhhh I am hungry now

Ready In: 40 Minutes
Yields: 4 servings

"Basil, Italian-style bread crumbs, Parmesan cheese, and teriyaki sauce flavor these hamburgers for sophisticated palates. They are topped with melted cheese and served on onion rolls."

INGREDIENTS:
2 pounds ground beef
1 onion, chopped
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried basil
1/4 cup Italian seasoned bread crumbs
1 tablespoon grated Parmesan cheese
1/3 cup teriyaki sauce
6 slices American cheese
6 onion rolls

DIRECTIONS:
1. Preheat oven to broil.
2. In a large bowl, combine the ground beef, onion, salt, ground black pepper and basil; mix together well. Then add the bread crumbs, cheese and teriyaki sauce. Mix this together well and divide into 4 to 6 large, round balls.
3. Place the hamburger balls onto a broiler pan, evenly spaced. Press down on each ball, either with your palm or with a spatula, until a perfectly round patty is formed.
4. Broil for 8 minutes, turn each patty over, and broil for 8 minutes more. (Note: The outside of each patty should appear almost burnt.)
5. Turn off heat and place cheese slices on each patty. When cheese is melted, remove from oven and serve on onion rolls.

yes, it is very easy, just mix the raw beef mince with a beaten egg. some salt pepper and if you want to some grated onion and any other flavours you want, shape into patties and fry or grill. yummy,
A very nice way to do it as well is do the above then gently roll them into some fresh bread crumbs, fry them over a low heat in a little olive oil, remove from pan when nicely brown, add some thinly sliced mushrooms and fry till golden brown, add i table spoon of lour to the pan and mix in, add 1/2 pint beef stock and stir till boiling, add the beef patties into liquid and gently simmer for 10 Min's, then serve with baby new potatoes and a fresh green salad, lovely lovely lovely, by the way, done like that they are called Salisbury steaks. in my burgers i add some worshtershire sauce soy sauce and garlic powder and kneed together. let it marinate for aobut 30 minutes in the fridge.
make 2 small flat patties and add bleu cheese crumples in the center and put the patties back together and grill for about 7-9 minutes on each side or until you reach desired temperature
i love bleu cheese and this is a really good way to eat it with your burgers!

I make them for my brothers and sister, even though i don't like them myself. Ok, here's my recipe:

Ingredients:
minced beef
tomato ketchup
seasoning (salt, pepper, etc)

Method:
mix minced beef with enough ketchup to hold it together. If you don't have much ketchup, use an egg aswell. Add seasoning and shape into burgers!
And there you go!

Delicious Grilled Hamburgers

"Juicy, smoky grilled hamburgers. Serve on buns with your favorite toppings."

INGREDIENTS:
1 pound lean ground beef
1 tablespoon Worcestershire sauce
1 tablespoon liquid smoke flavoring
1 teaspoon garlic powder
1 tablespoon olive oil
seasoned salt to taste

DIRECTIONS:
Preheat a grill for high heat.
In a medium bowl, lightly mix together the ground beef, Worcestershire sauce, liquid smoke and garlic powder. Form into 3 patties, handling the meat minimally. Brush both sides of each patty with some oil, and season with seasoned salt.
Place the patties on the grill grate, and cook for about 5 minutes per side, until well done.

Got a Wonderful one for you!! Take and make however many people your feeding times two-patties... Try to flatten them out, and round them really good... Oh, first season the hamburger with alot of garlic, and salt pepper... Get your favorite cheeses out, I use sharp cheddar.. slice some square peices enough for however many people your making hamburgers for... Get out your bacon... Put, the cheese in between the one pattie.. put another one, on top of that, pinch the sides, around the cheese, then wrap a slice, or two of bacon around the hamburgers, you made.. dont worry about tooth-picks.. just fry them, with the ends down.. And top them off with whatever you want barbecue sause, mustard mayo, lettuce, tomatoe, onion... On a good sesame seeded bun,........ Yummo!!! My kids liked their's with barbecue sauce!! And they thought they tasted "Wonderful !!!" For my kids to compliment me, and Thank me, for their dinner, is very "Rare" in my house!! Ha!Ha! Happy Eating, to you!!!!
