You can't roast garlic in a frying pan, However you can do it in the oven. Take a whole head of garlic and chop the top off. All the cloves will be showing, just sprinkle em with salt and pepper , put it on a piece of aluminium foil. Drizzle olive oil all over the top and close the garlic in the foil. put it in the oven at 350 F for abot 10 or 15 minutes. It's delicious you can eat it with bread or just incorporate it in to ypu favorite foods or sauces. Now, if you wanna fry the garlic the flavor will be stronger than roasting it. Also, always be careful not to 'brown' the garlic too much or cook it on a very high heat cuz you are gonna end up burning it, it's very delicate. When it's burned it will give out a bitter taste, basically ruin your dish, AND YOUR TIME INVESTED in preparing it.

you'll need a cover

add bulbs, not cloves, of garlic that you have sliced the top off of so it's flat on top....pour top quality olive oil on each clove and just let it go into the pan too...don't saturate the whole pan though! Cover and put on med/slow heat for about one hour - maybe a little less...check on it to see that it's not burning but it is turning the garlic brown and "roasted" looking. The aroma should be incredible! The garlic turns into a soft nutty paste....you squeeze it out of the hulls and onto toasted Italian bread ...to die for...I have a clay garlic roaster...it works the best!

Roasting anything is usually done in an oven. I have roasted whole garlic cloves in the microwave though and they come out very well and become sort of a creamy buttery texture and tastes great!

That's frying not roasting.

To roast properly you need to use an oven.

If youhave to use a pan then use a low heat and rub the garlicheads with oil before cooking.

Practice. Depending on the desired effect, you can use thick chunks, razor thin slices, flash fry it, or slow simmer it. You can't roast on a stovetop, but I know what you meant. I prefer it in butter, but it's healthier in olive oil.
