The chemicals in the food-- phenols. It has an element of sulfur in it too.

collard's and turnip greens are bitter, try adding some salt to them and it will take some of the bitter taste out, mustard green are the best to eat if you don't want bitter

Cause you have to add some salt/pepper/tobasco. They still are sort of bitter. Better to mix with other greens-spinach,turnip and so on. Then they are better!

No offense but there something you must be doing wrong.Collards are a good vegatable to eat how are you cooking them e-mail me if you dont mind they will be so good after i tell you the correct way. I'm a chef in Atlanta
