How do you hide the whole grain? I don't see how you can hide whole grain in white bread unless you bleach it. I prefer whole wheat bread, but white bread does taste better on certain things like grilled cheese and French toast, so I will occasionally buy a loaf. Am I wasting my money to get whole grain white?

I used to buy a whole wheat flour by King Arthur that was made from white wheat - the white wheat grinds finer than traditional wheat. I believe that's what the new white whole wheats are using.

As far as the nutritional value of white whole wheat vs. traditional brown whole wheat, I don't know about that - but the white wheat is a true whole grain.

Of course it still has to say 100% to be whole wheat.

Update: you got me curious. Here's an article about white wheat. Says the nutritional value and fiber content are the same as traditional red wheat.

Make sure it says "100% whole wheat." They are almost always brown or have a brownish color. Check the ingredients. Just whole wheat doesn't mean it's all whole wheat.
