And why do people preach about egg whites but not the yolk? What gives? Cheers

the yolk holds the eggs fat. I think egg whites are excellent and i like to scramble mine or make an omlette with cheese brocoli and tomato.

beaten eggwhites, when strained over a bubbly clear soup makes it more interesting and wonderful. add your favorite chopped-up vegetables. makes for a light meal when eaten as is, or with bread/crackers.

i use it on sponge cake, too; low in calorie but divine. no icing needed.

most people try to do away with the yolk because of its high cholesterol content. if i really want to use the yolk in a dish, 2 yolks can be substituted with 1 whole egg. a recipe that calls for 6 eggyolks can use 3 whole eggs, cutting the cholesterol content to half.

when making scrambled egg for a group, i can beat eggwhites from 4 eggs and one yolk. looks almost the same except it's lighter in color and lighter for the heart. if im not in a hurry, i use this same ratio of 4:1 to make omelets. i just add all the fillings that i want.

Its all the hype about lowering fats and cholesterol but one yolk a day is good the nutrition in the whole egg far out ways the negative.

You can hard boil egg and peel the white or separate and make an omelet, quiche like regular egg.

Well, they taste very good on lemon meringue pie... but that's probably not the method you were looking for ;)!
Try making them in an oriental style egg-drop soup. My dad makes it sometimes. Very good!

egg whites are very good for you. no fat, no cholesterol...i would scrambe them, that's how i like them. or i hardboil the whole egg and toss the yolk.

whip them and use as a merigue topping for pies and desertsand they make good candy...works well in egg drop soup...
