Most food service manufactures and restaurants choose canola or corn oil to fry chips, some use blends.
The only restaurants that I know use fats are the Asian and Hispanic, they seam to want the flavor that the animal fat give the food.
If you are frying your own chips use a high quality canola oil preferable a liquid. Do not use crisco or any other solid shortening.

There are a lot of myths about cooking with lard for chips. Lard will get to a lot higher temperature than oils ,so the chips are sealed quicker and less fat soaks into the chip. This way they come out crispy and not soggy and limp. I use lard for roast potatoes, crunhy on the outside and light and fluffy in the middle, now pass the sea salt......

Most chip shops use veg oil but for proper chips they've just got to be cooked in beef fat or duck fat. Only once in a while mind what the impending obesity pandemic.

No fat is best to deep fry anything in. Try canola oil or extra virgin olive oil. They even add a hint of flavor to the chip. Tried it myself. It's Good.

Don't use olive oil, as the molecules break down in high heat and becomes saturated fat, much worse than using 'crisp and dry' or something else! You can't beat proper chips though, even if its healthier to oven them, if we have proper chips we use crisp and dry
Most chippies use sunflower oil round here, though the posher ones use lard...
