Alison's Gluten Free Bread

Yummy bread without a speck of gluten."
Original recipe yield: 1 - 1.5 pound loaf.

INGREDIENTS:

* 1 egg
* 1/3 cup egg whites
* 1 tablespoon apple cider vinegar
* 1/4 cup canola oil
* 1/4 cup honey
* 1 1/2 cups warm skim milk
* 1 teaspoon salt
* 1 tablespoon xanthan gum
* 1/2 cup tapioca flour
* 1/4 cup garbanzo bean flour
* 1/4 cup millet flour
* 1 cup white rice flour
* 1 cup brown rice flour
* 1 tablespoon active dry yeast

DIRECTIONS:

1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. Five minutes into the cycle, check the consistency of the dough. Add additional rice flour or liquid if necessary.
2. When bread is finished, let cool for 10 to 15 minutes before removing from pan.

There is no one single Paleo Diet, as our ancestors from all over the world ate dramatically different diets depending on the climate where they lived, their landscape, accessibility to water bodies, and the latitude that they lived. 1½ hours 20 min prep
Change to: loaf US Metric
1/3 cup rice flour
1/3 cup maize flour
4-5 teaspoons gluten free baking powder
2 egg yolks
1 cup soya milk or buttermilk
2 tablespoons sunflower oil
2 egg whites, beaten till stiff


Pre-heat the oven to 190 C/375 F/gas mark 5. Combine the flours and baking powder together making sure to mix well.
In another bowl mix the egg yolks, milk and oil together. Slowly add to the flour mixture, being careful to remove lumps. Then fold in the egg whites. The consistancy should be a bit thicker than single cream.
Oil a tin and line with greaseproof paper. Pour in the batter and bake for 1 hour till golden brown.

Ingredients:

1 tsp granulated sugar
1/2 cup warm water
1 envelope active dry yeast
1 cup water
2 tbsp minute tapioca
2 cup whole bean flour
1/4 cup cornmeal
2 tbsp cornstarch
2 tsp gluten-free baking powder
1 tsp salt
2 egg whites
1/2 cup skim milk
1 tsp poppy seeds

Instructions:
Spray 8 x 4 inch loaf pan with nonstick spray. Coat inside with
cornmeal and set aside.

Dissolve sugar in warm water in a small bowl. Sprinkle yeast over
top. Set aside for 10 minutes or until frothy. Stir well.

Combine water and minute tapioca in a saucepan. Bring to a boil.
Cook for 1 to 2 minutes or until thickened and clear.

Stir together bean flour, cornmeal, corstarch, baking powder and salt
in a mixing bowl.

In separate bowl, whisk together egg whites and milk. Whisk in yeast
and tapioca mixture. Stir into dry ingredients, beating until
smooth. Set aside for 10 minutes.

Turn out onto surface generously dusted with cornstarch. Dust hands
with cornstarch and sprinkle a little over dough. Knead 4 to 5 times
and fit into prepared pan. Brush top with milk and sprinkle with
poppy seeds.

Bake in 400 F oven for 45 minutes or until browned and loaf sounds
hollow when tapped. Makes 1 loaf, 16 slices.

Variations seed bread, herb bread, Foccacia & pizza crust to be added
to recipe after testing.

The program has given me ton of great ideas for meal. The meal plan is really good. I am starting slow, trying one thing a week.
