And do you think that the word Attishoo sounds like a sneeze? I just can't imagine how the two were connected in the first place..

I say bless you or if no ones about and I sneeze I say bless me, when I was little and someone said atishoo I used to go get 'a tissue' as that's what I thought they were asking for when they sneezed.

Islamically the Muslims are to say when they sneeze;
Alhamdhu'lillaah (All praise and thanks belongs to Allaah -the One True God)
The Muslim who hears should say; Yarhamukullaah (May Allah have mercy one you)
The Muslim who sneezed should say; Yahdikumullaah wa uslibalaqum (May Allaah guide you and make your condition better).
This is all part of worship and is rewardable by God and is making supplication for one another. Sneezing is a blessing from God as when we sneeze our nostril, throat and other organs cleans it self from dust and other particles that may have entered through our mouth, nose, plus it cleans and clears the system of the body when we have cold. When God created the first man (Adham) when the soul reached the nostrils he sneezed and praised God for it. Concerning yearning than it is incited by the Devil and he laughs at the person who does it as we believe.

Gezundheit!!!
That's what they say in Gemany and USA (some parts)

Anyway, the "bless you" part came from the early pope. People in Medevil Europe used to believe that when you sneez, you're actually sneezing out the devil and evil spirits...So the pope commanded the people to say "Bless you" to one another when that happens....
Some variations to this story may exist...

It is linked to the olden times when children were made aware of the death of their beloved ones during a plague. They would form a circle, hand in hand and say this poem - aattishoo aatishoo we all fall down... As sneezing is a symptom of plague.

You should Say Bless you!! or God Bless You!!
why?
Coz everytime u sneeze u miss a heartbeat or your heart stops beating everytime u sneeze, thats why they say bless you so that your heart does not stop beating forever.

Good question!!! Having worked several ren-faires, I can answer this one in different context for variety.

When someone sneezes we cross ourselves & the standard response is 'grammercy'. It was a religious/superstitious response to what might be seen as a curse. In other words, God grant mercy.

Bless you.

Apparently it was thought that your soul could escape when you sneezed - by saying "bless you" it kept your soul routed in place...

bless you!

which apparently comes from when people had the black death in London. If someone was sneezing it meant they were going to croak soon!
