There are so many things to do & see. Here is a higgledy piggledy list !
Hong Kong Island (this is where many westerners live & work ) :
Get on the Star Ferry from Kowloon to Hong Kong Island & see the beautiful city scape of towers . Sadly they are relocating the ferry soon.
The tea museum in HK Garden is interesting & there is tea house nearby which serves delicious vegetarian dim sum with classic types of Chinese tea.
There are many many restaurants & bars around Hollywood Road and the Soho area. If you are a Westerner you will not feel too much of an alien here.
Keep clear of the Wanchai area . This is full of western men & prostitutes.
You can go hiking around the many hills (including the Peak) on HK Island & visit beaches & bays.
If you like horse racing , go to Happy Valley. The season has just started. Sha tin on the other side of the harbour also has a race track.
The Kowloon side is more Chinese & just strolling around the busy streets at night is a must for any westerner.
There is a good museum on the harbour.
There are many restaurants & bars giving good views of the harbour & Island eg Felix bar at the top of the Peninsula hotel.
The Hong Kong Heritage centre in Sha Tin is excellent for at look at the local culture.
The New Territories have many beautiful beaches & bays.
Lantau island has a magnificent giant Buddha.
You will be spoilt for choice for hotels. My boyfriend & I prefer the Hong kong Island hotels but they are more expensive. The Shangri La in Pacific Place (near Hong Kong Garden) is my favourite. I can recommend the Marriot too.
Macau is one hour away by ferry. You do not need a visa to get there. It is an odd place. On the one hand it is the gambling capital of the East with loads of casinos but also there are old Portuguse Parts which are very scenic. There is also a giant tower you can jump off if you feel adventurous and brave. I have never enjoyed the food here though.

You gotta go up to the Peak - you get a really beautiful view of the skyline especially if you go at night.
You can also go island hopping - some of the surrounding ones are cool - the giant Buddah on Lantau (I think) is class.
Mong Kok Market is brilliant for sights sounds and smells - as are all the markets over there.
It's probably all changed since I lived there (6 years ago), but this stuff above will definitely all still be there - have a brilliant time!

Mongkok is good for souvenirs/gifts etc all items are negotiable on price so get blagging. But becareful cos there are alot of pick pockets & they might try to scam u.
Tourist areas, you must see the New World centre, you've got film stars hand prints in the concrete floor. Really cool & it looks out onto the bay. Plus there's HK island. Luckily enough English is the second language in HK, so get cracking!!!
But here's advice, go to the suburbs of HK. Basically the KCR line. Go to a station like Kowloon Tong and change for the Suburban line. Get a HK equivalent to the Oyster Card & get travelling. Ok as i was saying go to Kowloon Tong and get the train going towards Lo Wu station. Now once you get to Lo Wu station, you're basically in borderline China. So you'll need to get a visa. gonna cost a couple of quids. But u'll be needing ur passport & visa with u once u get to Lo Wu. Then once inside u'll be able to buy much cheaper stuff than HK. I'm tellin you from food to clothes to electronics etc. And Lo Wu has a new train station built there & loads of shops surrounding the station. So get spending there I advise you. U'll get heaps more than in HK & if you wanna get ur hair done & nails etc would cost u less than £1.

Gold coast,Peak,Discovery bay,Lantau,is the best place for me to go.
For shopping lots of shopping mall to choose,but if you want to go to night market you can go to mongkok,tsimshatsui and stanley.
Hongkong site is better compare to kowloon site and new territory,everywhere you could see more sightseeings.
About food its really great....
Lastly the DISNEYLAND.
