Pan fried with a little garlic and parsley with a puff pastry crust. Wait till they tell you how much they enjoyed it, then break the news to what they have just eaten.

According to a book I read, you can eat squirrels. The reason people don't eat them is that they are basically rats with good PR.
If you decide to electrocute and eat some then choose country squirrels as they don't have as many diseases. Once killed, skin them as though peeling an orange, remove head and feet, then take out internal organs. Wash thoroughly then cook as though it was a chicken joint. Leave off the chicken sauce!

Potato Enchiladas.
make mashesd potatoes with butter, sour cream, chopped scallions and cheddar cheese. Soften corn tortillas in hot oil. Roll tortillas with the mash potato mixture and line up in a baking dish. Cover with cheddar chees, and salsa, either your own made salsa or I use pace Picante sauce when I'm in a hurry. Bake in the oven at 375 for 15 minutes, and there ya have it.

Elvis used to eat them deep fried. I have no idea if this means they taste good but I would be cautious, I mean look what happened to him!!!
I'd opt for a nice Tesco Value quiche, at any church event you just can't go wrong with a quiche!!!

There's not much meat on a squirrel. If they are to be barbequed, skewer them with some onion and peppers in between each one, and present your congregation with a squirrel kebab.
