Heat some oil. turn heat to medium. add chopped onions- half cup. cook 4 min while stirring. add turmeric pwdr(optional)- 1/2 tsp, red chili pwdr- 1/2 tsp, exotic spices pwdr- 1 tsp, ginger-garlic paste- 2 tsp. cook 2 min. add tomato puree- 2 tbsp. stir. add coconut milk- 1 cup. add 200 gms. prawns. stir & cover. cook 2 min. uncover. add some water & season it. stir and cover. cook 4 min on low heat.
sprinkle little fresh lime juice & garnish with green coriander leaves. serve medium hot.

Gallon of water, half a bottle of vinegar, 5 tablesppons of cayenne pepper. Cut up 4 onions, bag of carrots, bag of celery, cut in half two onions. Boil the veggies 15 minutes, put in 4 pounds of pealed prawns and let cook 5 more minutes. Strain the whole thing out, removing the lemons. Place on a large plate, refrigerate for one hour. Serve with spicy cocktail sauce. Theres a slight hint of heat, the veggies are delicious!
P.S. Cut veggies in large peices, 1 to 2 inches in length, and large wedges

This is a Cantonese style of cooking, hope you like it!
<<<<<<<< Stir-fried Salty and Crispy Prawns >>>>>>>>
600g tiger prawns, with shell
3 gloves garlic (finely chopped)
2 small Thai red chilli (seeded, finely chopped)
green onion (finely chopped)
1/2 cup cooking oil
1/2 egg white (slightly beat)
1 tablespoon of cooking wine
1/2 tablespoon cornstarch
1/2 teaspoon salt
a dash of five-spive powder
a dish of black pepper
1) Rinse the prawns and pat dry, cut off antennae and all appendages from the prawns (still in shell), Devein and mix with egg white, cornstarch for about 15 minutes, set aside.
2) Heat the wok in high heat, then add oil till hot, reduce heat to medium high, deep-fry the prawns for 1.5 minutes or until the shell is crispy, remain and drain.
3) Remove oil from the wok, reheat the wok then add 1 tablespoon oil, stir fry garlic & chili till fragrant, add salt, five-spice powder and black pepper to the wok, return prawns in wok and stir quickly for 1 minute or till mix well, sprinkle green onion.
4) Transfer to a serving plate, serve immediately

I love frying them in 1tbls butter with 1tbls garlic and 1brown onion for about 5 minutes do not overcook simple slice one to see if cooked not to the point its chewy serve as is or in pasta etc

Try frying them like fish/chicken. Marinate them in curd, turmeric powder, garam masala, chilli powder/pepper powder for 10-15 minutes. Then shallow fry in oil or butter. Add lime juice b4 serving.
