I feel sheepish asking, but I never have had the chance to enjoy this type of cheese until now.

It's a personal choice.

The white rind is edible - and has a slight 'mushroomy' taste.

If sliced thinly - I keep the rind on. If eating as big chucks - I cut it off.

pre-packed supermarket Brie is often sold 'unripe' with a hard / dry centre. It's best to wait until this 'ripens' and it's soft all the way through.

I'd recommend a Somerset Brie as it's very mild & creamy. The unpasteurised French ones have a slightly stronger flavour.

I make seasoned skillet baked brie, and I remove the rind. I cut the brie into rectangles, as much as possible, then put those pieces in the freezer for 30 minutes. Then take a couple of pieces out at a time and use a fine cheese grater. It s quick, easy, and you loose very little cheese this way. It doesn t take all the rind off, but a few veins here and there in a baked brie is no problem at all.

Yes, evidently it is proper. I ve been researching this myself a lot lately and everything I ve come across says that the rind is supposed to be eaten with the brie because it balances the internal flavor of the cheese. This along with serving it at room temperature and all kinds of little things evidently bring out it s true flavor. I m somewhat with you though, I don t mind the rind but it definitely isn t as good as the tip, which is said to be the most flavorful part.

Well, the proper way (as French do it) is with a rind. Just keep it out of the fridge for 30 minutes before consuming it - it will have soft and creamy centre and you'll be able to sense the real flavour. Bon apetit!

Don't feel sheepish-many people don't know either. I also eat it if it is thinly sliced, but the thicker wedges I gently slice the rind off. This will sound silly, but my children always loved it when I quickly "deep fried" the Brie rinds(like for chips or onion rings)! They felt all "grown-up" eating them!

No need to feel embarrassed. One normally eats the rind, although I've known a few people who don't (although they are seen as wasteful).

with the rind on,the older the brie the better the flavour and also should be consumed at room temperature.same with Camembert

i always cut the white rind off. brie is delicious on crackers.
