Gormeh sabsi. I love it. I ate in Iran whenever I got the chance (30 years ago) and now I make it in California. I have to go to a specialty shop to get the fenugreek leaves and I use beef because American and Australian lamb do not taste like the meat from the fat-tailed Persian lambs. The people I knew in Iran then were all very friendly.
