Making good quality chips, as distinct from french fries, is a dangerous job and definitely not recommended for young people. The cooking oil must be very hot, and I mean very hot. At the moment the chips are put into it is where the danger truly is, as if the chips are still wet, the water and oil begin to boil and splash.
So, peel the potatoes, cut in half, then slice the half in long thick cuts, about 1/3 inch thick. Wash in cold water - then dry them.
As I said bring the cooking oil to a high temperature then carefully add the chips. Keep on high heat until they become golden brown, test one by squeezing it to see if it is cooked. Drain from oil - carefully - and ready to eat.............

Cut your own chips, stir in a small amount of oil, coating individual chips, then add salt and pepper. Spread out on cookie sheet and place in oven at 425 - 450 degrees F., turning occasionally until light brown and crispy.

Take frozen potatoes and fry them while frozen. There you go....
