Well, not everyone likes mayo, and if you've ever tried to choke down one of those honkin' huge rolls without something to grease the skids, you'd already know the answer to this question.
Without a little oil or mayo, it's like trying to swallow a football whole. And besides, the vinegar gives the meat and veggies a little extra kick.

Some people find it preferable to mayonaise. Its almost like a salad dressing for the vegetables on the sandwich. I have never been a fan of oil and vinegar on a sandwich, but I love using an olive tapenade (pickled green olives, peppers, and olive oil) instead of mayonaise on my sandwiches.

Try it, you might like it. It's traditional on Italian coldcut subs. It gives the sandwich a tangy taste, kinda like pickles or pickled peppers.

that is so when you sit down to eat your sub..it is soft and mushy. (you know like a sponge.)...that is so gross....i cannot stand that stuff...
