If you use 1 1/4 vegetable items per person (for 75, that would be almost 94 whatever - potatoes, carrots, etc.) you will be fine on the veggie side.
If using beef, count on 3/4 pound per person and for chicken 1 pound per person.

side dishes are usually proportioned at 4 ounces per person...but if you think you have big eaters go maybe 5 ounces depending on what else you are serving. If they are baked potatoes just figure one per person or sometimes I cut them in half lengthwise and figure on 3/4 per person. If its roasted or mashed potatoes just figure on 4-6 ounces as stated above..for 75 guests that would be about 19-23 pounds. I would go toward the higher amount to be safe...you never want to run out!!

I think a person on average eat 2 potatoes. SO you need about 200 potatoes to be safe. Or have it catered this way the caterer decides how much goes on each plate to conserve.

I figure 1 potatoe per person unless it is in a stew or soup then 1/2 a potatoe per person.

you don't. Buy a copy of a book called Food for Fifty it will answer all your questions. You don't even need the latest copy. mine is about 10 years old. All of who feed large amounts of people for a living have a copy somewhere on our book shelves at work.
To convert any recipe: Put the new yield on top
Put the old yield under it ,
Divide, arrive at a number - that is your conversion factor. Multiply the rest of your recipe by it
Seriously buy the book it will save you hours of calculations,

make a potato salad , with sparkling oregano, a drizzle of virgin oil and chopped boiled potato's ( with pores and skin on ) or basic peeled potato, then upload salt (sea salt) in case you like you could upload very, very finely chopped garlic. this is an Italian potato salad. variations are - * you could upload chopped parsley * finely diced bits of 1st Baron Verulam

Most recipes tell how many servings they are for. Figure out how many of each recipe you would need for 75 servings and go from there.

the way i usually do it is 2 potatoes a person. or 1.5 multiply and round to the nearest whole number. there is always enough that way
