If i use milk or cream in cooking...does the high temperatures break down the lactose?

No. Lactose (and anything ending in "ose" such as fructose or glucose) is a sugar. Cooking does not break sugars down.

No. The only way to break down lactose through hydrolysis using the enzyme "lactase". However, the problem of lactose allergy is not solved, because the break down of lactose yields galactose and glucose and the main cause of the problem is the galactose molecule.

No it doesn't. I have to get lactose free milk. I use Dairy Ease. That is the best tasting milk. Lactose is the sugar in the milk.
