Prejudice is, as the name implies, the process of "pre-judging" something. It implies coming to a judgment on a subject before learning where the preponderance of evidence actually lies, or forming a judgment without direct experience. Holding a politically unpopular view is not in itself prejudice, and politically popular views are not necessarily free of prejudice. When applied to social groups, prejudice generally refers to existing biases toward the members of such groups, often based on social stereotypes; and at its most extreme, results in groups being denied benefits and rights unjustly or, conversely, unfairly showing unwarranted favor towards others.

Prejudice is the act of judging someone based on their 'cover', it is the opposite of the statement "Don't judge a book by it's cover."
There is/are a reason(s) behind the judgment, but the reason(s) is/are false. If someone took time to get to know a person they might realize that the person is a good person instead of instantly thinking they are bad.
Prejudice comes in many forms, racism and discrimination being two of them. In U.S. history the laws that created 'Separate but equal' was a form of racism (as a specific example).
As stated by most other answers here: "It is a judgment that has no evidence." But as I said, there is evidence and reason, just false evidence.
An example of such evidence (using my previous example) would be judging an African-American because he's black and because your skin color is white you automatically assume the black race is inferior to you.

How I remember it: pre=before judice=judge
Basically, prejudice means that you judge someone before you get to know them. Those who are prejudice judge others on race, religion, sex, or other factors.
