Chicken in the oven:
2Tablespoons of butter
3Tblsp of soy sauce
1teaspoon garlic powder
Combine ingredients in a coffee mug place in microwave 20 or 30 seconds to melt the butter.Brush onto chicken parts in a baking Dish and bake at 350 for about an hour.
Serve with cous cous and boiled spinach.

If you scrub one big potato per person and 'bake' them in the microwave for a few minutes (3-4 minutes per potato) while the oven's heating, you can serve baked potatoes a lot sooner than by just using the oven. Heat the oven to 375 degrees Fahrenheit. When the potatoes are finished in the microwave -- they're not ready to eat yet, though -- slice them in half long-wise and place them cut side down on a cookie sheet that's been sprayed with non-stick spray or very lightly oiled. Bake them for 30 minutes. They're done when the cut side is lightly browned and the potatoes are tender when you poke them through the skin with a fork.
While they're baking, get the toppings ready. Here are some to choose from:
meat -- choose one:
about 1 lb ground meat, nicely browned
hot dogs cut into thin slices and warmed in a skillet (spray the pan with non-stick spray first or oil it very lightly)
a few slices of lunch meat cut into strips
canned chili (with or without beans, as your family prefers)
dairy -- choose one or two:
grated or crumbled cheese
slices of processed cheese, cut into thin strips
sour cream or plain (non-flavored) yogurt
margarine or butter
veggies -- choose one or two:
slices of green onion or regular onion
broccoli crowns, warmed according to package directions
green beans, warmed according to package directions
slices of bell pepper (whatever color you have in the house)
Serve each person two halves of potato, and let them choose their toppings from what you've set out. If you have salad fixings, that would be a good complement to the potatoes. Enjoy!

Try a different type of spaghetti than with meatballs or marinara sauce. Two really easy ones are with Pesto, which is a sauce made with fresh basil, olive oil, garlic, parmesean cheese and pine or walnuts.
Another one that my family really really loves is Spaghetti Carbonara. While your noodles are cooking, take a large skillet, add about 3 Tablespoons of olive oil and about 5 slices of bacon that you chopped up. Cook the bacon until crispy and set aside. In a medium bowl, break 3 eggs add 6 tablespoons of grated parmesean cheese and some pepper. When your noodles are cooked, drain them, put them in the skillet with the bacon and olive oil, stir it up reall well to get the pasta coated with the fat, then pour the egg/cheese mixture, toss well and serve. The heat of the pasta will cook the eggs. My boys say I never make enough

Baked Potato Casserole
Boil 4 large potatoes, mash somewhat, add 1 stick butter, 1/4 tsp. salt.
In a bowl mix together 1 cup sour cream, 3 chopped green onions (scallions), 1/2 cup Real Bacon Bits.
Place potato mixture in 13x9 casserole dish, top w/ the following mixture. Sprinkle w/ 8-12 oz. of shredded cheddar or american cheese.
Bake at 350 for 25 minutes.

This is a very easy recipe....
Chicken.
buy about 1-1 1/2 lbs of chicken quarters.(not boneless)
4 large potatoes cut into large wedges
1/4 cup of Zesty italian dressing
1/2 cup of grated parmesean cheese
in a 9 x 13 pan put the chicken quarters and potatoe wedges
pour the dressing over the wedges and chicken
sprinkle with the cheese
bake for about 1hr or until the chicken is done.
oven at 400 degrees.
its easy and inexpensive and in one pan.

If you have a crock pot, in the morning throw in pork chops, ,1 per person,1 bag of sauerkraut, about 1/2 cup of chicken broth. cover and cook on low all day. about 1/2 hour before serving place a sliced apple on top, cover again for 30 min. Serve with a nice salad . Good for you for cooking. Have fun!!!!!
crock pots are the best for easy meals. you might want to check one out from your local library.

you can try a tater-tot casserole.
You need a package of frozen tater-tots, a package of shredded cheese, some frozen green beans (not canned) and some ground beef, and a can of cream of mushroom soup.
First cook the ground beef, in a skillet, stirring frequently so that it ends up loose like taco meat.
Spray the bottom and sides of a baking dish with a non stick spray like Pam.
Put a layer of tater-tots on the bottom of the dish, cover the layer with cheese then add the green beans then the cream of mushroom soup,then the cooked ground beef, top it off with another layer of the tater-tots and sprinkle with cheese on top.
Put in oven and cook for about 30 minutes
Serve with a tossed salad

How about some roasted chicken and veggies with some mashed potatoes and gravy... It easy, season the chicken (whole or in parts) with garlic, salt & pepper and lemon. Cut the veggies (carrots, celery, onions, peppers, squash etc) then season them with salt & pepper and some olive oil. roast the chicken for 20/25 minutes and then put the veggies in until chicken done and veggies fork tender. Make some mashed potatoes and served along with the chicken and veggies.

cook fried rice with some simple ingredients such as eggs, chicken meat and some greens. then put the rice in a bowl and lay some cheese over the rice. Put in oven for 5mins and there you go. You have baked rice =)
