I cook my pot roasts in a foil covered casserole dish for 3 hours at 325 degrees. I put the roast in the pan and salt/pepper the top. I add water until it's halfway up the roast then I cover it tightly with the foil. It's usually pretty good to add an onion at this point. At one hour left I add potatoes and carrots. It's a family favorite.

Sear the cut on all sides in a frying pan with a splash of oil. About a minuter per side. Place in a roasting pan with a lid, salt and pepper the meat, dump a can of whole tomatoes over top, add a handful of smashed garlic gloves, thickly sliced onion, carrots, parsnips and celery with leaves, filling up the sides of the roast pan or pot. Use the tomato can to add water so at least a quarter of the meat is covered. Maintain water level throughout cooking. Cook a minimum of 4 hours with the lid on. Add the carrots and parsnips later if you want them firmer, though putting them early is easier and they just melt by the end. The meat should almost fall apart. There is no medium rare pot roast - the meat is too tough. That's why you cook it so long. Put a large bunch of fresh coriander on top as it cooks to add flavour. Serve with mashed potatoes made with lots of butter and chives.

Preheat oven to 375. Once pot roast is in for about twenty minutes, turn down to 325 for about forty five minutes. Check temp with thermometer, internal temp of meat should be 150. Remove from oven and let rest for ten minutes, internal temp will rise another 5 - 10 degrees. Then, remove from bag

Toss it inside a 5 gallon bucket, get a cord from a vacuum cleaner, cut it, slice it and place a piece of metal like a spoon top to one end of the wire and the same to the other, then place a piece of plastic between those two pieces of wired metal, and rubber band it. Plug it in, drop it in the bucket full of onions, carrots, potatoes, garlic, salt, pepper, and beef stock. Cook for about 3 hours. Flip after internal temp reaches 100. Done temp should be 145.

after its on its last hour...that's the best time to place your veggies in with the roast..if you keep them in all together for the whole cooking time...your veggies are gonna be MUSHY. good luck:)
