Slice a small pouch and stuff those chicken breasts, with whatever you like. Kids love surprise foods like that, especially if the stuffing is one of their faves. Stuff the mushrooms too!

Ingredients
1 to 2 tbsp Butter or margarine
2 Whole chicken breast split
2 Green onions, chopped
Salt and pepper to taste
1/4 lb Sliced or small whole mushrooms, washed and trimmed
1/3 cup Dry white wine
Preparation
Melt butter or margarine in skillet and brown the skin side of chicken. Turn chicken over add onions and saute for 5-10 minutes or until chicken is golden and onions are tender. Season to taste with salt and pepper. Add mushrooms to pan, pour in wine, scrapping any bits that are stuck on the bottom of the skillet. Cover and cook over low heat 20 minutes or until chicken is tender. Remove the chicken, onions and mushrooms to a warm platter. Cook the pan juices over high heat, stirring for a few minutes. Pour over the chicken mixture and serve at once.

Stuffed chicken breasts:
Slice the breast like a pocket
season(the seasoning is everything, try sweet basil or oregono) the mushrooms and stuff into the breasts
season the breasts and cook until done in the oven
volla!
PS a can of mushroom soup over the breasts and bake in a pyrex dish is good too

This is a dish i make all the time and my boyfriend and little one love it. Pre heat your oven to 200oC take your chicken breast and slice it down the middle to create a butterfly shape. Spread one side of the chicken with Philadelphia Cheese and cover the cheese with sliced mushrooms, add a little pepper and mixed herbs and fold back into orginal shape. Wrap in streaky bacon or parma ham and place on a lighly greased baking tray and bake for 30-35minutes. Serve with baby potatoes vegetables and any leftover mushrooms you may have. Hope you try it out.

Have you tried the Campbell's mushroom soup recipe? It's right on the can, you saute the chicken breast till brown, then add the mushroom soup and the sliced mushrooms, and add water. (I believe it's a can of water.) You cook it on med heat, stirring a bit, and it cooks the soup into a gravy that you can serve over rice, (choose brown rice for healthy option.) Serve with a vegetable of your choice and some whole grain rolls.

Try the italian dish Pollo alla creme
its basically chicken breast fillets cooked in a sauce of mushrooms, onions, small amount of white wine or you can omit this, and garlic and cream (must be double cream or it will split)
You first cook the chicken breasts in a large frying pan until they are coloured and sealed on both sides. transfer to a plate and put to one side, you then cut up 2 medium sized onions and put in frying pan along with a good portion of sliced mushrooms add 1/2pt of white sauce, chopped garlic and some oregano or italian seasoning 1 oz of butter and let it come to simmer for about 5 mins give it a stir add back your chicken breast fillets stir and cover with some of the sauce if too thick add a little milk cover with foil and simmer on hob until chicken fillets are cooked through, at the end of the cooking time add as much cream or as little as you like, season with black pepper and salt and stir leave to simmer gently for two mins stir and serve. I serve this with a side salad and small crispy roast potatoes. Try it its delicious!!

Aunt Joan's Chicken
Cook the chicken beast in a casserole dish for 15-20 minutes. Drain excess liquid. Add can of green beans, the mushrooms, and a can of mushroom soup.(If you want you could add wine to the mushroom soup, but mix it first before adding it to the casserole dish) Put a layer of swiss cheese on top, and sprinkle with bread crumbs.
Cook in oven at 350 for 20 minutes.
Enjoy with some fresh bread!

Extra ingredients needed: onion, bacon, pasta, soured cream, wholegrain mustard, garlic
Chop an onion any old way you fancy, and cut two rashers of bacon into fine strips. Before you go near the cooker, prepare your mushrooms. Fry the onions and bacon together on a low heat.
Chop your chicken breast into strips, and stick them under the grill.
Start boiling whatever pasta you have in.
Add the mushrooms to the frying pan, and chop garlic to taste. Add that, too. When everything's about to come to completion, add two generous tablespoons of soured cream to the pan, stir it in to bind everything together, and then add a teaspoon of wholegrain mustard, stirring that in too.
Toss everything together, and serve.

If they are boneless breasts I like to filet the breast then flatten it with a roller. Add the mushroom and some mozzarella(if you got it) and rosemary to the center of it. Roll it up and secure with a toothpick. You want to bake it at around 375. I will usually add a little chicken broth to the pan to baste the chicken with. After it's done(golden brown) I make a very light sause from the leftover broth and drizzle it over the chicken. I usually serve this with wild rice and a veggie of your choice.
IF they are bone in breasts, bake them with the mushrooms on top. Very simple. Use any leftover dripping from the pan to make chicken gravy to serve with some mashed potatoes. Who doesn't like mashed potatoes??

Grill the chicken with a little butter and herbs, slice and grill some haggis. Serve on a bed of mashed potatoes and mashed carrot and turnip (or swede depending where you live). Make a nice whisky sauce (white sauce with a bit of whisky, not for your 4 year old) and voila - you might want to leave the mushrooms out though.
