Drain the yams and dump them in a casserole dish. Dump a few big spoonfulls of brown sugar on and dot with real butter. Bake at 375 for about 20 minutes, then put the marshmallows on and put the dish back in the oven until the tops are toasty looking. Maybe 10 minutes more.

when I'm wanting candied yams fast, I drain my canned sweet potatoes, saving the juice in a sauce pan. I set the yams aside and reduce the liquid over medium heat with added brown sugar. It takes awhile to do this, but if you will watch it closely you can do it over high heat. Anyway, you want the liquid to thicken a little. Spray a baking dish big enough to fit your yams and put the yams in dish, sprinkle cinnamon if you like over them. When sauce is thickened, remove from heat and add a teaspoon of vanilla flavoring. Pour over yams, then cover top with marshmallows. Bake at 350 for as long as it takes to brown the marshmallows and heat the dish through.

Yummy Yam Casserole - Really yummy !! 4 pounds yams 2 eggs 1/4 cup brown sugar 2 tablespoons butter, melted 1 teaspoon salt 1 teaspoon ground cinnamon 1/8 teaspoon ground allspice 1/8 teaspoon ground nutmeg 6 ounces pecan halves 1/3 cup brown sugar 1/4 cup melted butter Preheat oven to 375 degrees F (190 degrees C). Poke yams in several places with a fork, then cook them on high power in microwave oven until heated through and soft, about 20 minutes. When cooled, remove skins and place the yams in a large bowl. Beat yams until smooth. Then beat in one egg at a time, blending after each addition. Stir in 1/4 cup brown sugar, 1/8 cup melted butter, salt, cinnamon, allspice and nutmeg; beat until the mixture is light and fluffy. Transfer mixture to an ungreased 3 quart casserole dish. Arrange the pecans in a single layer on top. Sprinkle with remaining brown sugar and drizzle 1/4 cup melted butter over the top. Bake for 25 minutes in the preheated oven, or until browned and bubbly. Serves 8. ^^^^^^^^^^^^^^^^^

Fast???
Put the Yams in a baking dish (I would butter it first) sprinkle them with brown sugar, cinnamon, some pats of butter (real butter!!!) and your marshmellows. I would do it at 350 until it starts to bubble. You can also make the brown sugar, butter, cinnamon mixture in a sauce pan and pour it over the yams - this way the butter will be melted & you can see how much juice you have - sprinkle with pecans too - Yum - It's fall!!! Enjoy!!!!

OOOHHH! Don't tell I told you this but, dump the canned yams in a pan sprayed with PAM, sprinkle some cinnamon on the yams. then put pats of butter on top of the yams, then sprinkle brown sugar, about a cup, over the yams and butter, then put a bunch of the little marshmallows on the top of it all! And then bake until it's nice and bubbly and toasty on top! (And if you tell my mama I told you to make yams from a can???) Cuz the yams in the can aren't already "candied" you have to use the brown sugar, butter, cinnamon mixture with the marshmallows. I don't like onions in mine, I think you'll like this recipe!! It's quick!
