Oh, the story of my parent's life when they built their house. Basically, if you didn't negotiate it up front and stipulate all the materials and work to be completed in a contract, you're screwed. You have no rights.
Contractors have all the rights because they can put liens on your property very easily. This is why I would never do a remodel or build a house using contractors.
Your best course of action at this point is to find a different contractor. My parents actually had to pay the contractor to go away and finish the work themselves. How's that for getting screwed. :) Oh, and then the scum-sucking lawyers got involved and also got a piece of them.
A little piece of advice: don't get a lawyer- you won't win.

If he had a bond go after the bond. That covers you or if he has business insurance. Take photo's of before and after to prove your case. I also hope you had a contract on these jobs too.

Call in a good contractor, get an extimate, and bring suit.
