When I was an infant/ toddler teacher, I liked to combine art and sensory experiences. Play dough is one of the best. Be sure to use non-toxic play dough because many kids will taste it. Homemade salt and flour play dough is great! You can add some lemon or vanilla extract to it to let the kids explore their sense of smell. You can have the kids make it with you. They love taking turns mixing it and then you give them each some of the dough to kneed. Finger painting with chocolate pudding is also a good sensory experience. I also gave the kids jello to play with and eat. They loved squeezing it and tasting it. I made it with fruit juice and Knock's gelatin so that there was no sugar or food coloring in it.
As far as sensory tables are concerned: you can lay out different types of fabric anything from flannel to corduroy so the kids can feel the differences. You can also ad some pieces of sand paper. You might have a table that has things to smell. You could include some of those cute scratch and sniff books for the kids to look at and some flowers (non poisonous of course,) for the kids to smell.
For sound exploration, you can have a table with different percussion instruments - drums, bells, maracas, etc. or some of the toys that say the animal sounds.
