Why is human poop brown?
Because that's the way it's supposed to be...
And it's not always white it's sometimes blue, which is from the berries that they eat..

Bird poop is NOT white. It actually has colors in it, usually green and brown.
What you are thinking of is actually bird urates. This is a product of the kidneys that is not to be confused with urine, which birds also produce and is mixed in with the urates.
So that white stuff you see is actually more aptly referred to as bird pee, not bird poop.

Because birds excrete both intestinal and urinary waste at the same time from the cloaca. The waste from their urinary tracts, mainly uric acid, (comparable to human urine), is the white gluey stuff. The waste from their digestive tract, like berry seeds and such, is the darker stuff that stains your fences and patio furniture. Kind of a one-stop-dumping-system that is also common to reptiles.

The green in bird poop is the food. The white is the urates. It is similar to human urine.

Bird Poop is comprised of two portions. A green portion and a white portion. The white portion is urine, the green portion is food waste.

Birds and reptiles excrete a lot of phosphorus. That's the white part. Sometimes it will just be a white cap on a darker part.

Birds don't sweat or urinate. It's like urine but with higher concentrations of salts and minerals. It's just more poop and good enough to make mascara out of.
