A young lady to another would say something like:
"Me encanta ir de compras," which literally means "Going shopping enchants me."
.
"Me encanta correr" would take care of running.
If you want to tone it down a little, from "love" to "like" substitute "gusta" for "encanta" in both sentences.

Me gusta correr. (I like to run)
Really, you don't need to say "love." It's kind of implied.

translates to I love to shop
"Me gusta correr!"
translates to I love to run
