Be careful what you think you heard. For example, the military guarantees you "tank fixer" school, not the job. If you complete the school, but aren't really very good at it, why would they want to leave you their? Why would you want to stay in that position?
I had enlisted into the Army as a telecommunications specialist, after going through the training I wound up being a computer specialist. The funny thing about this was that I was OJT into that position. Seems they already had more telecommunication specialists than they needed where they sent me.
Always remember one thing... the needs of the military come first. Don't believe me? See why they are doing away with cooks in the Army.

No. When you sign a contract, you are signing for a specific job. Unless you fail out of the school which teaches that job, or are otherwise unable to perform that job, a trained tank mechanic can't suddenly be forced to become a cook.
However, all Army soldiers and Marines, regardless of their job's, are considered to have a secondary job as infantry. Meaning, you still have to be in good physical shape, be able to pass target practice, etc...

Not in so blunt a way. You have to qualify for your job with ASVAB scores. Say, for instance, you want to be a machinist. The ASVAB score required is a cumulative of 215. If there are ten positions, and 11 people trying to go in, the person with the lowest will be steered toward another career.
In a friend of mines case, his job was merged with another MOS. He was given the choice to retrain in another field, train in the field his MOS was being folded into, or elect for early retirement. He retrained in a field that, again, his ASVAB scores qualified him for.

It is true in a sense. If they promise you a certain job, they can force you to retrain into a career of their choice or get out. They can't however change your job and force you into another if they have guaranteed you a job in a certain career field. These people who tell you otherwise are just anti-military and trying to say anything to get you not to join.

Technically yes;.. Guarentees apply to the intial SCHOOLING and nothing else. If you are otherwise qualified for a certain job, you can be guarenteed the school. they do NOT guarentee that you will stay in that job forever and always. If you fail out of the school, they have the right to stick you where they want to.
If the job itself goes away or is merged with another one, they can force you to convert.
