A plain grilled salmon is good served with a cucumber-dill salsa. Just mix together some diced cucumber, onion and fresh dill with salt, pepper, a bit of olive oil and lemon juice. Or you could make a creamy version with sour cream.

This is a recipe that I came up with for a whole Copper River sockeye salmon.

Serves 8 people.

1 whole salmon, approx. 5 lbs.

375 mL Chardonnay
2 large lemons, juiced
1.5 oz. fresh dill, chopped
4 shallots, sliced
1 baguette
Course ground salt and pepper

Cotton twine. Cut into 9 inch peices.

You can buy whole fish from the market. It needs to be butterflied and deboned. Explain to the fish monger what you are doing and tell them to leave the tail on. It is also important to use a good quality breed of salmon. Don't use Atlantic or farm raised salmon. These particular salmon are lacking in flavor that you get with Sockeye and King salmon. That being said, when you get the fish home you will want to examine it for residual bones. There should be only a few, but even the best market will miss them. They are removed easily with tweezers. After prepping fish, rinse off and set aside.

Slice the baguette into small peices.

Combine the remainder of ingredients in a large mixing bowl with the baguette.

The stuffing mixture should then be stuffed into the belly of the fish. Use the twine to tie the fish shut. You need be sure that you tie it firmly, but don't tear the skin.

I cook this at 250 for about 30-45 minutes. Check the fish periodically, it should flake apart. Keep in mind also that salmon will look raw even when it is cooked.

When cooking is finished, remove and slice to serve. Leave twine on to slice, trust me.

I serve this with risotto and artichokes. Can be served with anything, but keep sides simple so you don't overwhelm the flavor of the salmon.

1) Preheat barbecue (oven) to a medium heat.
2) Sprinkle salt and pepper on Salmon cutlets
3) Cook salmon cutlets on lightly oiled barbecue grill for 3-5 minutes each side or until flesh flakes when tested with a fork.

Pineapple salsa

160 g fresh pineapple, roughly chopped
2 spring onions, finely chopped
1 fresh red chili, seeded and finely chopped
2 tablespoon lemon juice
2 tablespoons finely chopped fresh mint

Put all the ingredients in a food processor or blender and process to combine. Serve at room temperature with salmon cutlets & boiled vegetables

* 1/4 cup vegetable oil
* 1/2 cup orange juice
* 3 tablespoons lime juice
* 1 tablespoon tequila
* 1 tablespoon grated lime zest
* 1 tablespoon minced habanero pepper
* 1 clove garlic, minced
* 4 (5 ounce) salmon steaks
* 1/4 cup butter, softened
* 1/4 teaspoon garlic salt
* 1 tablespoon lime juice
* 2 teaspoons minced habanero pepper
* 2 teaspoons grated lime zest

DIRECTIONS:

1. In a bowl, stir together vegetable oil, orange juice, 3 tablespoons lime juice, tequila, 1 tablespoon lime zest, 1 tablespoon habanero pepper, and garlic. Reserve a small amount to use as a basting sauce, and pour the remainder into a shallow baking dish. Place the salmon in the shallow dish, and turn to coat. Cover, and refrigerate for 2 to 4 hours, turning frequently.
2. In a small bowl, mix together softened butter, garlic salt, 1 tablespoon lime juice, 2 teaspoons habanero pepper, and 2 teaspoons lime zest. Cover, and refrigerate.
3. Preheat grill for medium heat.
4. Lightly oil grill grate, and place salmon on the grill. Cook salmon for 5 to 8 minutes per side, or until the fish can be easily flaked with a fork. Transfer to a serving dish, top with habanero butter, and serve

GRILLED SALMON WITH LIME BUTTER SAUCE

Just a sprinkle of zest and a dab of lime butter sauce beautifully highlight the flavor of grilled salmon.

6 (6-oz) pieces center-cut salmon fillet (about 1 inch thick) with skin
1 1/2 teaspoons finely grated fresh lime zest
6 tablespoons lime butter sauce

Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).

Season salmon all over with salt and pepper, then grill, flesh sides down, on lightly oiled grill rack (covered only if using gas grill) 4 minutes. Turn fillets over and grill (covered only if using gas grill) until just cooked through, 4 to 6 minutes more. Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.

Cooks' Note: If you aren't able to grill outdoors, salmon can be cooked in a hot lightly oiled well-seasoned large (2-burner) ridged grill pan over moderately high heat.

Makes 6 servings.

Potato Chip Crusted Salmon

2-3 lbs salmon
salt
fresh ground black pepper
1 (5 1/2 ounce) bag kettle-cooked potato chips
1/2 lime, zest of
1/3 cup chopped fresh dill
2 tablespoons olive oil

1. Preheat oven to 400°F.
2. Line a baking sheet with foil and lay the salmon, skin side down, in the center of the baking sheet.
3. Season with salt and pepper.
4. Crush kettle chips (they're crunchiest), lime zest and dill in a bowl until the chips resemble coarse crumbs. Mix in olive oil.
5. Coat the salmon with a thin, even layer of potato chip mixture and pat gently so it stays put.
6. Bake for 20-25 minutes or until chip coating is nicely browned. Use spatulas to transfer to plates to serve.

Why not add lemon pepper seasoning and squeeze fresh lemon juice on the salmon. Add a Caesar salad with small freshly grilled shrimp. Then get some garlic sticks/bread. To drink get Simply Lemonade(walmart)

Mix melted butter, some lemon juice & a little bit a worchestershire sauce. Brush that on your salmon, then season with some pepper. If you have fillets with skin on them, skin side down on low heat for about 20 minutes, then flip over & cook til the meat gets a crust texture on it.
