why did He put it there and then make it so we blame ourselves for our sins?

Because it fit the story better. Otherwise, it would have been just, "God made Adam and Eve, and they lived happily ever after.". Sorry, but that just doesn't sell.

One simple reason: mankind wasn't made into a robot - unlike other animals we had free will to choose. satan entered the Garden so the choice could be made - accept God and His blessings live as Adam and Eve or choose what God & Jesus already know - Mankind would reject God in favor of the world. this was the "wisdom" offered to Adam & Eve.

See the world! Look at its beauty, its appeal. But you can't have it and God, choose "today who you will serve". mankind chose!

Why make God complicated?

P.S. If God wanted you to blame yourself forever for your sins, Why send Jesus at all?

Why have endless prophets "waste their time" (and often their entire lives unfulfilled) promising to rescue man?

It introduced the concept of free will and the possibilty of disobeying God. Before the tree Adam & Eve had no restrictions or laws to break. As such they couldn't have sinned against God because there were no laws (of God) for them to break.

According to our belief,

God created the world so man can learn and experience.
The G E tree is a choice for man. To partake means to taste death, and experience life on earth.
Jesus Christ was sent mainly to save man from the down fall by Adam's transgression. ( fair and square) We need not to blame anyone, but responsible for our own actions.

22 For as in Adam all die, even so in Christ shall all be made alive.
(New Testament | 1 Corinthians 15:22)

22 And now, behold, if Adam had not transgressed he would not have fallen, but he would have remained in the garden of Eden. And all things which were created must have remained in the same state in which they were after they were created; and they must have remained forever, and had no end.
23 And they would have had no children; wherefore they would have remained in a state of innocence, having no joy, for they knew no misery; doing no good, for they knew no sin.
24 But behold, all things have been done in the wisdom of him who knoweth all things.
25 Adam fell that men might be; and men are, that they might have joy.
26 And the Messiah cometh in the fulness of time, that he may redeem the children of men from the fall. And because that they are redeemed from the fall they have become free forever, knowing good from evil; to act for themselves and not to be acted upon, save it be by the punishment of the law at the great and last day, according to the commandments which God hath given.
27 Wherefore, men are free according to the flesh; and all things are given them which are expedient unto man. And they are free to choose liberty and eternal life, through the great Mediator of all men, or to choose captivity and death, according to the captivity and power of the devil; for he seeketh that all men might be miserable like unto himself.
(Book of mormon 2 Nephi 2:22 - 27)

12 Behold, he created Adam, and by Adam came the fall of man. And because of the fall of man came Jesus Christ, even the Father and the Son; and because of Jesus Christ came the redemption of man.
(Book of Mormon | Mormon 9:12)

No, prehaps the "Tree of Knowledge" was in the Garden of Eden not because God had it in His mind to tempt man but because He trusted them enough. Maybe He lived there too.
