Chicken & Broccoli alfredo - really easy -
Chicken, onion, broccoli, seasonings to taste (salt & pepper), alfredo sauce (in spaghetti aisle) all in one pot:

Cut chcken into bite size chunks; cook in a large skillet until almost browned; add onion (sliced). Cook about 4 minutes longer; add broccoli - put a cover over skillet (i use tin foil) to "steam" broccoli; add alfredo sauce - mix until heated thoroughly. Serve with ziti, rigatoni etc.

With boneless white meat, especially small pieces like those, you will need high heat and a short cooking time. These can overcook if you even look at them funny!

Heat a tablespoon each of butter and vegetable oil in a nonstick skillet. (My stove has markings from 1 to 9, and I usually use 8, if that gives you an idea.) Wait till it stops foaming and is JUST beginning to turn golden brown. Put in your chicken. Once it's in, salt and pepper the exposed side. Let it brown just one minute; turn and brown the other side for no more than more minute (salt and pepper that side too). Take them out and take the pan off the heat. Add 2 or 3 green onions, sliced, and stir them around about 30 seconds, not more--just until they start to get limp. Add 1/2 to 2/3 cup heavy cream, depending on how much sauce you want. Stir until it starts to thicken a little bit. When that happens, put the chicken back into the pan. Lower the heat, cover the pan, and simmer for literally about 3 minutes--that's all it will take for the chicken tenders to be cooked. You don't want them tough! Take the pan off the heat again. Stir in 1 tablespoon tarragon vinegar. (If you don't have tarragon vinegar, use any white wine vinegar, flavored or not.) Serve the chicken with the sauce spooned over. This is good with roast potatoes or a rice pilaf, with either broccoli or a green salad.

Cut them to bite size pieces and cook in 10" skillet until done. Pour in cream of Chicken soup and simmer for another 10 mins.

Serve with some white rice, spoon some of the soup mix over the rice, have some nice white wine and you're all set.

If you want a vegetable, serve some thin cut green string beans, make a garlic sauce for them out of 3 tbsp butter and freshly minced garlic.

I've made this a few times. It's quick and very easy.

I made chicken tenderloin last night, I sauteed them in a pan with a touch of olive oil, then removed them from pan put in 3 chopped green onions tops and all and a can of sliced ripe olives(the black ones) let that cook a minute or to then add you chicken back to the pan to heat through. I made a paste with cornstarch and chicken broth then poured that in my pan to make a little gravy to serve over the white rice I cooked with a can of chopped green chiles. We had herbed bread from the bakery and some asparagus to finish off the meal. It was great!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

I made wraps with chicken tenders. I used broccoli slaw made with ranch dressing for the veggie in the wrap. I placed some slaw on a 'wrap', added the friend tenders and voila, my family actually fought over who go the last one.
