I used to own chickens and had no problem with fresh eggs from the pen.
I see Martha Stewart get fresh eggs and immediately cook with them.
Just don't use raw eggs like in a meringue, hollandaise, or cream pie since they are not pasteurized.
Baking is best as they are already up to room temperature and will incorporate great with the ingredients.

How fresh??? Reach under the hen, take the egg from the nest walk in the house & cook with it fresh????
I wouldn't, but that's me. We have 4 hens & I like to rotate the eggs but I prefer boiling eggs that are at least 5 days old. "FRESH" eggs are a pain to peel even after boiling them. Otherwise I'll use the others the following day after they have been cleaned & refrigerated.

We raised chickens for our eggs and we would use them right away if we needed too. Extra large, dark yolks and one hen laid doubles (and once in a while triples) all the time.

they can be used immediately.then refrigerate the leftover eggs are good for up to 1 month.
