There must be some difference in the taste. I am not a fan of fresh water fish - but I love salt water fish. Why is that? I find fresh water fish seem to have more of a "fishy" taste - and that is about it on the flavor. Salt water fish is not as "fishy" tasting to me - although I do agree that the salt water fishes have their own distinct flavors - and I prefer their flavors.

Salt water fish and fresh water fish bodies work differently.

**Excretory system

As with many aquatic animals, most fishes release their nitrogenous wastes as ammonia. Some of the wastes diffuse through the gills into the surrounding water. Others are removed by the kidneys, excretory organs that filter wastes from the blood. Kidneys help fishes control the amount of ammonia in their bodies. Saltwater fish tend to lose water because of osmosis. In saltwater fish, the kidneys concentrate wastes and return as much water as possible back to the body. The reverse happens in freshwater fish, they tend to gain water continuously. The kidneys of freshwater fish are specially adapted to pump out large amounts of dilute urine. Some fishes have specially adapted kidneys that change their function, allowing them to move from freshwater to saltwater.

So couldn't this possibly alter the difference in taste from fresh water fish from salt water fish.

I don't know - but once again I like salt water fish better - there has to be a reason. I hope this made sense!;)

Yes, they definitely taste different mainly because the oceans have salt water and the fresh waters don't. I live near the ocean so I prefer that taste because it's what I grew up with. There's quite a difference between lake bass and sea-water bass for instance.

Every fish has it's own unique flavor and texture and depends how you season and prepare your fish how much different it tastes.
We have steelhead in WA and they are ocean going rainbow trout that return to the rivers (fresh water). They taste similar to their fresh water counterparts but are larger and less fatty in the belly area. So the texture does seem more flaky but taste hard to detect any difference between the ocean going vs all fresh water varieties.

Every fish tastes different from every other fish. Trout and Walleye, both freshwater, both very different. Salmon and Halibut - both saltwater, both very different. There's really no rule about freshwater vs. saltwater as far as taste goes, only that the really big fish are all saltwater.

Also, there is no reason why being from the ocean makes a fish less healthy.
