Thought about going rabbit hunting but i have herd bad things about jack rabbit meat in the Mojave desert, CAlifornia.

stew...cook it a long time. i have eaten jack rabbit while hunting in Wyoming that was fried. it was o.k. if you like rabbit but you had to chew it for several minutes before you could swallow it.

First make sure it is not parasite infested. If there are any unusual 'lumps' anywhere on the jackrabbit, discard it.

The meat is tough, but quite palatable. Boiling it first helps. Then fry it with your choice of spices. Sauteed onions or gravy will help. Really, it is not that bad. Cottontail rabbit is better, though.

boil it, the meat is tuff but good, after you boil it its good for bbq,soup or baked
