Baked Cheese Cake


Ingredients for a round 8-inch pan

3 egg yolks
3 egg whites
3 tablespoons flour (sifted)
1 cup (225cc) whipping cream
1/2 cup (100 grams)sugar
1 8-oz. (226 grams) cream cheese room temperature
1/4 tsp salt
1 tbsp.lemon juice and one whole lemon rind
1 tsp. vanilla
Prepare a pan , covering with parchment paper. Or oil a pan and dust with flour lightly. Set the oven to 325F(162C).

Finely grate the lemon peel. Sqeeze 1 tablespoon lemon juice.

Beat until creamy:
8-oz. (226 grams) cream cheese.

Add 1/4 cup of sugar to the cream cheese. and beat 2 more minutes.

Add to the cream cheese mixture and beat well:
3 eggs yolks
1 tbsp. lemon juice
one whole lemon zest
1 tsp. vanilla. Beat 2 more minutes.


In a separate bowl, whip until fluffy:
1 cup (225cc) whipping cream


Add 1/4 of whipped cream to the egg mixture. Mix well until it becomes even color. Add the rest of the whipped cream and fold gently into the egg mixture.

Before the whipped cream is completely incoporated, sprinkle 3 table spoon sifted flour and fold in gently until the flour disappears.

In a clean dry bowl, whip until fluffy but not dry:
3 egg white (After the egg whites becomes foamy, add:
1/4 cup of sugar Beat until silky merange but not dry

Add 1/4 of merange to the egg mixture. Mix well until it becomes even color. Add the rest of the merange and fold gently into the egg mixture.

Pour the batter into the prepared cake pan and bake for 50~60 minutes at 325F. When it is done, open the door wide and close half way to let it cool slowly. Take it out of the oven after 30 minutes.

Best Cheesecake
1 3/4 C Graham Cracker Crumbs
1/3 C butter, melted
1 1/4 C sugar, devided
3 pkg (8 oz each) Cream Cheese, softened
2 tsp vanilla
3 eggs
1 C Sour Cream
directions:
Preheat iven to 350F if using a silver 8 or 9 inch speingform pan (or to 325F if using a dark nonstick 8 or 9 inch springform pan). Mix graham cracker crumbs, margarine, and 1/4 cup of the sugar. Press firmly onto bottom and 2 1/2 inches up side of pan; set aside. Beat cream cheese remaining 1 cup of sugar and the vanilla in a large bowl with electric mixer on high speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Add sour cream. Pour into crust.
Bake 1 hr to 1 hr 10 min, refrigerate 4 hours.

Baked Cheesecake Recipe
serves 16
prep 10 minutes; bake, etc. 1-1/2 hrs

1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter, melted
3 (8 ounce) packages cream cheese, softened
1 cup sugar
3 large eggs
1/2 cup sour cream
2 tablespoons lemon juice
1 tablespoon vanilla (or 2 teaspoons vanilla and 1 teaspoon almond extract which is what I use)
1 cup sour cream
3 tablespoons sugar
2 cups fresh berries (garnish)

Combine graham cracker crumbs, sugar, and butter; press mixture into the bottom of a 10" springform pan; set aside.
Blend cream cheese and sugar together (in a food processor or with a medium-speed electric mixer) until smooth; add eggs one at a time, blending well after each addition; add sour cream, lemon juice, and vanilla; blend well; pour filling over the crust and spread evenly.

Lay a sheet of aluminum foil that has been bent up slightly to form a "foil tent" over the top of pan and not touching cheesecake (this is to prevent overbrowning) then bake at 350° for 1 hour and 15 minutes (remove foil tent after 50-55 minutes) or until top is set.

Combine sour cream and sugar; remove cheesecake from oven and immediately spread sour cream mixture over its top; return cheesecake to oven for 5 minutes to set topping; remove from oven.

Cool cheesecake on wire rack; cover and refrigerate to chill thoroughly.

Just before serving remove sides of springform pan and transfer cheesecake to serving platter; garnish cheesecake with berries (we like chilled cherry pie filling on top) and serve.

OPTIONAL: Just before pressing the graham crust into the bottom of the springform pan, spray the pan's inner sides with a little no-stick cooking spray, sprinkle a spoonful of combined graham cracker crumbs and sugar into the pan, then tilt and spread that mixture around so that it sticks to the coated sides and later adds to the visual appeal of your finished cheesecake

1 package honey graham crackers for the crust and about a half stick of butter. Grind crackers (rolling pin or blender works well). Place in bowl with slightly melted butter. Mix well. Put in pie tin, spread evenly and press crust firmly. Bake at 350 for 5 min.
For the filling, use two sticks of cream cheese, one egg, 2/3 cups of sugar, and a teaspoon of vanilla. The cream cheese should be room temperature. Mix well in clean blender until smooth. Pour on pie crust. Bake at 325 for 17-23 min., or until it is firm and barely jiggles when you move it.
For the topping, use 1/2 container of sour cream (24 oz.), 1/4 cup of sugar, 1 tblsp. of vanilla. Mix well. Pour on top of filling. Put back in oven for another 5-7 min. at 325. Make sure the top doesn't turn brown. Let cool for 15 min. on countertop. Then put in fridge for 4-6 hours, covered. Enjoy.

looks like youve got some recipes so i waont give you another,but,I always put a pan of water in the oven while baking it,helps prevent the top from cracking
