the positives: once you have your wedding licence (no waiting period) you can choose from over 70 chapels and beautiful natural locations such as the Grand Canyon, Red Rock Canyon, Lake Las Vegas, Mount Charleston. You can pay anything from a couple of hundred dollars for your ceremony, flowers and photographs, up to $20,000 plus for your wedding.
A lot of people think Vegas is just about small independent chapels (often with quickie weddings), but if that's not your thing why not look at some of the bigger hotels for beautiful facilities and more traditional services (that last an hour or more rather than 5 minutes). Try the Bellagio, Caesars Palace, The Wynn, and the Venetian in particular if you want something upscale, though most of the big hotels can offer great facilities. Don't rule out the independents though - Little Chapel of the Flowers and Little Church of the West are very pretty and have catered for some of the biggest names in showbusiness, so they have to be doing something right. Little Church of the West also looks like a traditional church - maybe this is something that would appeal?
Also, this is a city set up for dealing with large numbers of people, so there's also some great restaurants that have a lot of experience dealing with large parties. They can organise catering and your wedding cake. A lot of the big hotels can also organise this for you if you have a large event in mind.
Possible downsides - not everyone is going to be able to travel with you to your wedding, though this becomes a positive if cost is a consideration. That said, we're flying out from the UK to get married in Vegas this month and we have 28 friends and family coming with us - so you may be surprised how many people are keen to come along.

I was married in Vegas almost 3 years ago. We were married at the MGM Grand. It was very fun and exciting. The only negative things I can think of is the cost and the coming home back to reality after getting pampered. Our wedding consisted of 16 people that went with us, my hair, his tux which we rented there, the rooms for everyone which most shared rooms so there was 8 rooms. The flights, gambling money, food money, the chapel , the notary who married us, plus limos to and from the airport, plus all the money we spent there was about 100,000$. I'm sure it is alot cheaper then that when you don't have all the extra people. But it was well worth it and a great memory.

The positive is you can get it done quick and cheap with little planning. The negatives are you may come to regret not spending more time on planning your special day

I got married in Vegas.. It was simple, quick, not much planning, didnt have to deal with family and it was cheap. But the 3 minute ceremony was very cheesy and not very memorable. and also my daughter was not a part of it which i do regret.

Positive: many different options of where to get married, themes, etc. quick, easy
Negative: could be a little cheesy, can't usually have a quick wedding, people have to fly out to attend

The positive is it is easy to get married there and I don't know of any negatives about it unless it is not having your family with you during the event.
