mascarpone starter...

mix mascarpone with gorgonzola cheese (or blue cheese)
take some chunks of celery (wash them)
fill the celery with your cheesy mix and top them with walnuts!
let them rest in the fridge for 20mins before eat them!

its a fresh way for a healthy start!!!

Try this one, it's easy and tasty:

PEARS WITH MASCARPONE

3/4 lb. Mascarpone cheese or cream cheese
1/4 c. hazelnut liqueur
1 lemon
4 qts. water
3 tsp. mint, fresh, minced
4 pears, Anjou or Bartlett
8 walnut halves
4 sprigs mint, fresh

Cut the lemon in half and squeeze the juice into the 4 quarts of water and add the two lemon halves to the water also. Peel, halve, and core the pears and place them into the lemon water and refrigerate.
In a mixing bowl, beat the Mascarpone cheese, hazelnut liqueur, and minced mint together until smooth. When ready to serve dessert, drain the lemon water from the pears and arrange the pears on individual dessert plates. Top each pear half with 3 tablespoons of the cheese mixture. Garnish with 2 walnut halves each and a sprig of fresh mint. Serves: 4.

I make a bread spread with it.

Simply add some Italian dressing to some mascarpone cheese, stir well and use in place of mayo on sandwiches.

Another : chop crisp fried bacon, parsley, lemon juice and mascarpone cheese for another spread on bread or crackers. Even bake this one in the oven for a melty cheese treat on melba bread or bruscetta.

You can basically use mascarpone like you would cream cheese or even ricotta. Try making Lasagna with it,,it is to die for !!! : )

you can mix it with cinnamon and sugar and spread it on toast, bagels or as a dessert topping.
you can use it in place of whipped cream on desserts.
it makes a great cream sauce for pasta
