Honestly ive been in this business for 16 years, and there are two answers to your question depending on the bookie. Guys only become bookies if they know another bookie. i started out as a sheetholder for a connected guy in queens. this meant i took bets from a group of about 7-8 friends who played real regularly. i would make a 25% cut off of there losses. That meant i was only picking up 100-200 bucks a week but that was ok for college. But i was part of a bigger sports book that employer around 50 sheet holders. The first thing you got to establish when you go into biz for yourself as i did, is a good relationship with your local, or a fat bankroll. The only way one could be really confident in making money w/out a layoff would be having a big bank. honestly that was what more of the degenerate gamblers who also were bookies did. it was risky, but in the end you would turn a profit. when i was independent , i always had to turn a profit, so i would always layoff my action. it was a smaller profit but consistant. and safe. well about as safe as you can get when it comes to illegal gambling. Anyways i hope i answered your question. ciao.

I would imagine it would be easier for a local bookie as they would be greatly affected by the local favourite therefore they can lay some attractive wagers on a betting exchange or with a compatriot in the opposing team's locale. Once a bookie gets large enough that his clientele can be from anywhere, there may not be enough bias to lay attractive wagers.
