Potato is an underground tuberous stem.It will have small buds on it called as eyes which have the ability of reproducing a new potato plant.Hence it is known as tuberous stem.It is covered by a thin layer called as tunic.It undergoes asexual reproduction.

The potato is a part of the plant named Solanum tuberosum (family Solanaceae). The part you eat is called "tuber" .
Even if the tuber lays under the ground it's not a root; it's a particular type of stem. In fact to reproduce potatoes you can sow tubers...

It is a tuber vegetable, a stem not a root. However if you are asking as a dietary question, the potato is a starchy vegetable. Your body breaks it down in the same manner it would break down a slice of bread. Not really so much a vegetable as it is a bread or grain serving. Other starchy vegetables include corn, and peas.

I think the Tuber answers are correct. All I know about Potatoes is how to tell a Straight Potato from a Prostitute Potato. The Prostitute Potato wears a Sack that says; "Idaho"!

Potato, is not exactly a vegetable, it is a tuber with lot of starch in it.of course, there are several types of tubers that can be classified as potatoes, botanically.!!!!!!!!
