I have two girls, one that is a picky eater, the other has ADD, so the doctor recomends that I fix a high protein breakfast, but my picky eater won't eat eggs very often. I would like to avoid fixing two seperate breakfasts for my own sanity. I am tired of the usual french toast, sausage etc, as I am sure they are too, any suggestions?

Oh, bless your heart, you must be going crazy making two breakfasts! Here's a couple recipes that kids love and hopefully yours will too :)

Brunch Bake

1 loaf (8 oz.) French bread, cut into 1-inch cubes (about 5 cups)
1 medium onion, chopped (about 1 cup)
8 slices OSCAR MAYER Bacon, crisply cooked, drained and crumbled
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
1 cup KRAFT Shredded Low-Moisture Whole Milk Mozzarella Cheese
1 cup BREAKSTONE'S or KNUDSEN Cottage Cheese
5 eggs
1-1/2 cups milk
1-1/2 tsp. GREY POUPON Dijon Mustard
1 tsp. Worcestershire sauce
1/2 tsp. black pepper

PREHEAT oven to 350°F. Spread half of the bread cubes evenly onto bottom of 13x9-inch baking dish. Top with half each of the onions, bacon, Cheddar cheese and mozzarella cheese; cover with the cottage cheese. Top with the remaining bread cubes, onions, bacon, Cheddar cheese and mozzarella cheese; set aside.
BEAT eggs in medium bowl with wire whisk until foamy. Add milk, mustard, Worcestershire sauce and pepper; beat until well blended. Pour evenly over ingredients in baking dish. Press bread cubes lightly into egg mixture until completely covered. Let stand 10 min.
BAKE 50 min. to 1 hour or until center is set and top is golden brown.

Pork Sausage (good protein) and Apple Bake

1 egg
1/2 cup milk
1 pkg. (7 oz.) apple-cinnamon muffin mix
5 OSCAR MAYER Ready to Serve Pork Sausage Links, cut into 1/4-inch-thick slices
1/2 cup chopped Granny Smith apples
1/4 cup chopped onions

PREHEAT oven to 400°F. Beat egg and milk in medium bowl with wire whisk until well blended. Stir in muffin mix just until moistened. Gently stir in remaining ingredients.
SPREAD evenly into 9-inch pie plate sprayed with cooking spray.
BAKE 25 min. or until toothpick inserted in center comes out clean and top is golden brown. Let stand 5 min. before cutting into six wedges to serve.

Sausage Bake

2 Tbsp. margarine
1 lb. mushrooms, finely chopped
1 cup plain dry bread crumbs
1 pkg. (16 oz.) frozen LOUIS RICH Turkey Sausage, thawed
1 medium red or green bell pepper, chopped
3 Tbsp. chopped fresh parsley
1/4 tsp. ground red pepper (cayenne)
2 cartons (8 oz. each) cholesterol-free egg product

PREHEAT oven to 350°F. Melt margarine in large nonstick skillet on medium-high heat. Add mushrooms; cook and stir 10 min. or until mushrooms are tender and moisture has evaporated. Remove from heat; stir in bread crumbs. Spoon into 13x9-inch baking dish sprayed with cooking spray; press firmly onto bottom of dish to form crust.
ADD turkey sausage to skillet; cook on medium heat 12 min. or until no longer pink, stirring frequently to break turkey sausage into small pieces. Remove from heat. Add bell peppers, parsley and ground red pepper; mix well. Spread over crust; cover evenly with egg product.
BAKE 25 min. or until center is set.

Sausage and Egg Pizza (she'd be more likely to eat eggs on a pizza maybe!)

1 egg, lightly beaten
1 OSCAR MAYER Ready to Serve Pork Sausage Link, cut into 1/4-inch-thick slices
2 Tbsp. PHILADELPHIA Chive & Onion Light Cream Cheese Spread
1 whole wheat bagel, split, toasted
2 Tbsp. KRAFT Shredded Parmesan Cheese
2 thin slices tomato
Dash dill weed

SPRAY small skillet with cooking spray. Add egg and sausage; cook on medium heat 2 min. or until egg is set and sausage is heated through, stirring occasionally.
SPREAD cut sides of bagel evenly with cream cheese spread.
COVER bagel halves with the egg mixture; top evenly with cheese, tomatoes and dill.

Sausage Quesadillas
1 egg
2 OSCAR MAYER Ready to Serve Pork Sausage Links
1 whole wheat tortilla (6 inch)
1 Tbsp. finely chopped green peppers
2 Tbsp. KRAFT 2% Milk Shredded Reduced Fat Colby & Monterey Jack Cheese

BEAT egg lightly in small microwaveable bowl with wire whisk. Microwave on HIGH 1 min., stirring gently after 30 sec. Let stand 1 min. or until egg is set and no visible liquid remains.
MEANWHILE, cook sausage links as directed on package. Cut each in half lengthwise.
SPRAY medium skillet with cooking spray; add tortilla. Top half of the tortilla with peppers, cheese, egg and sausage. Cook on medium heat 2 to 3 min. or until tortilla is lightly browned. Fold tortilla in half to serve.

Nutty Pear Toast

1 slice multigrain bread, toasted
1 Tbsp. PHILADELPHIA Light Cream Cheese Spread
1/4 of a medium fresh pear, cut into thin slices
1 tsp. maple-flavored or pancake syrup
1 Tbsp. PLANTERS Walnut Pieces

SPREAD toast with cream cheese spread.
ARRANGE pear slices over cream cheese spread. Drizzle with syrup; sprinkle with walnuts.
SERVE immediately.

Toaster Waffle Sandwich

2 frozen waffles
2 frozen BOCA Meatless Breakfast Links
1 KRAFT 2% Milk Sharp Cheddar Singles
1/4 of a medium apple, thinly sliced
1/2 tsp. cinnamon sugar
1 cup 1% milk

TOAST waffles as directed on package. Meanwhile, microwave breakfast links as directed on package.
PLACE 2% Milk Singles on 1 of the waffles. Cover with apple, cinnamon sugar and breakfast links; top with remaining waffle. Cut in half.
SERVE with milk.

I have a 6 year old daughter, so I can certainly understand what it feels like to be rushed in the morning and have a picky eater. Here are some options that my daughter likes:

- mini bagels with cream cheese
- pigs in a blanket (you can make these on the weekend and re-heat them during the week)
- peanut butter toast
- Scramblers (toaster pastry with sausage, egg, and cheese)
- toaster multi grain waffes with a side of bacon

There are high protein cereals out there, the milk will provide protein and calcium as well.

You could also try oatmeal cooked with milk and add in some nuts for some good fat and added protein. Walnuts are a good choice as it'll help your children to stay alert and also perform better in school.

You could also try grilled cheese toast, or oatmeal topped with yogurt.

try bacon eggs put stuff in the eggs or make them look cute let the picky one and the other one help you decide what to fix for breakfast let them each trade off and write out the breakfast menus that would get them more involved and save you a little bit of a headache

Kids love cereal, Try Cornflakes with bananas instead of sugar
My Son used to be picky the only thing he would eat is cereal.
As long as they eat something..

Nut butters are a good source of protein (peanut, cashew, almond, etc). You can just make whole grain toast and spread some nut butter and fruit spreads on them and you've covered a lot of nutrition with complex carbs and fiber with something they can just pick up and eat.

Many cereals are fortifed with the vitamins and minerals that kids need. Read labels and compare. It's much easier to fix cereal than it is eggs every day, and the kids can get their own cereal. You might also consider Flintstones vitamins.

smoothies are a great answer . in a blender add 1/2 cup any kind of yogurt 1/2 cup orange juice a
1/2 banana and a handful a frozen berries blend.
they will think its a milkshake

well about 2 or 3 days a week they eat cold cereals..
i have been known to fix pancakes
bacon and eggs
gravy and biscuits..

but these big meals are for the testing days when they need to be full and concentrate on the tests... instead of giggling in class cause their tummy is growling

Hash Brown Quiche
3 cups shredded hash brown potatoes
1/3 cup butter, melted
seasoning salt to taste
1 cup diced cooked ham
1/4 cup chopped onion
1 cup shredded Cheddar cheese
2 eggs
1/2 cup milk
salt and pepper to taste

Preheat oven to 425 degrees F (220 degrees C). Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown. In a small bowl, combine ham, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper, and a little seasoning salt. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture. Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 20 to 25 minutes, or until filling is puffed and golden brown.
(Cook at night and reheat in the morning)


Sausage Gravy
1 lb. sausage
2-3 tbsp. flour
1/2 tsp. garlic powder
1 tbsp. Sugar
milk

Over medium heat, crumble sausage and brown. Sift flour into pan and stir with a whisk, creating a roux with the fat rendered from the sausage (some people remove the sausage, I personally don't). Add garlic powder and sugar to roux, add milk, stirring constantly as it comes to a boil. Be careful not to spill as gravy is very hot. Gravy will thicken as it simmers. If it becomes too thick, add more milk. Return sausage to pan if you had removed it. Serve over biscuits or toast.


Breakfast Pizza
12 ounces ground Italian sausage
1 tablespoon butter
1 cup chopped onion
1 (12 inch) prepared pizza crust
1 1/4 cups pizza sauce
12 ounces shredded mozzarella cheese
8 ounces pork sausage links, sliced
12 ounces shredded Monterey Jack cheese

Preheat oven to 350 degrees F (175 degrees C). Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside. Over medium-low heat melt butter in a large saucepan. Add onions. Cook slowly, stirring occasionally, until onions are soft.Place crust on pizza pan. Spread pizza sauce over crust and add Italian sausage. Cover with mozzarella cheese and place sliced links over cheese. Spread Monterey Jack cheese on top of links..
Bake in preheated oven for 20 to 25 minutes, until golden.
