I just bought a crock pot and I'm lovin' it! I'm looking for some creative recipes for dinner. Please include ingrediants, amounts and directions... and thanks in advance!

Spanish Rice Meal
1 box "Spanish Rice" style Vermecelli mix
1 lb. beef stew meat
1 can each diced tomatoes and diced tomatoes and green chilles
2 cans water

Combine all ingredients in crockpot, cook on low 6-8 hours, stirring occassionally so that vermecelli mix doesn't stick together. Serve wtih Salsa, cheese and sour cream.

Chicken (Crock)Pot Pie
3-4 boneless skinless chicken breasts or thighs, cut into pieces
2 cans veg-all, drained
1 can cream of mushroom soup

Combine all ingredients in crockpot, cook on low 6-8 hours. Stir before serving and serve over mashed potatoes with pieces from a pre-baked 9" pieshell cut into strips.

Slow-cook Chicken & Mushroom Stew
1 can cream of mushroom & roasted garlic soup
5-6 fresh, boneless, skinless chicken breasts
Salt and pepper to taste
1 package (8 oz.) med. white mushrooms
1 cup baby-cut carrots
1 celery ribs, cut into 1 1/2 inch lengths

In slow cooker, stir together soup and 1/2 can of water. Cut chicken into 2-inch chunks. Sprinkle with salt and pepper. Put chicken into cooker. Add mushrooms, carrots and celery. Stir gently to mix. Cover and cook on low for 6 to 8 hours or until chicken is done.

Crockpot Chinese Dinner
1 1/2 lb. pork steak (cut into 1/2" strips)
1 sliced onion,
1 green pepper,
sliced 8z. sliced fresh mushrooms
1 8z can tomato sauce
4 carrots, sliced
3 T brown sugar
1-1/2 t salt
1 1/2 T vinegar,
2 t Worcestershire sauce

Brown pork strips in small amount of oil in skillet. Remove excess fat. Place all ingredients with pork in crockpot and cook on low 6-8 hours. Serve with hot rice and top with soy sauce.


Sweet and Sour Chicken
1 medium onion, sliced
1 medium carrot, peeled, sliced
1 medium celery stalk, sliced
1 lb. boneless skinless chicken thighs, cut into bite-size pieces
1/2 cup KRAFT CATALINA Dressing
1/2 cup soy sauce
1/2 cup firmly packed brown sugar
1 tsp. grated gingerroot
1 can (8 oz.) pineapple chunks, drained, juice reserved
1 medium green pepper, sliced
1 medium red pepper, sliced
4-1/2 cups hot cooked MINUTE White Rice

PLACE onions, carrots and celery in slow cooker; top with chicken. ADD dressing, soy sauce, brown sugar, gingerroot and pineapple juice. Cover with lid. COOK on LOW for 7 to 8 hours (or on HIGH for 3-1/2 to 4 hours), adding pineapple and peppers for the last 30 min. of the cooking time. Serve over rice.

Honey&Mustard Brats
10 fresh bratwurst sausages
1 green bell pepper, sliced into long strips
1 red bell pepper, sliced into long strips
1 large sweet onion, sliced into rings and separated
2 cloves garlic, sliced
2 bay leaves
1/2 teaspoon liquid smoke flavoring
1 cups honey mustard barbecue sauce
1 (12 fluid ounce) can beer, or as needed
10 hoagie rolls, split lengthwise

Place half of the bratwurst in the bottom of a slow cooker. Arrange half of the green pepper, red pepper, and onion over them. Layer the remaining bratwurst over the top, and top with the remaining red and green bell peppers and onion. Throw in the garlic and bay leaves. In a separate bowl, mix together the honey mustard sauce, liquid smoke and beer. Pour into the slow cooker. Add more beer if necessary to cover everything in the pot. Cover, and cook on Low for 4 to 5 hours.

Crock pot roast is awesome! And yes, you'll need some liquid - about 12 ounces for a 2 or 2.5 pound roast. Beer is best, though beef broth would also be good, and I've even used Dr Pepper successfully in the past. Definitely put the carrots and onions at the bottom of the pot, then the liquid, then the meat. If you add potatoes, put them in last - if you put them on the bottom, they'll absorb too much liquid and turn to mush. Carrots are tougher; they can take it. And season the meat before it goes in the pot. Even a packet of onion soup mix is good for that.

Crock-Pot Chili:

1 pound ground round
1 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup dry red wine or water
1 tablespoon chili powder
1 teaspoon sugar
1 teaspoon ground cumin
1/4 teaspoon salt
1 garlic clove, minced
1 (15-ounce) can kidney beans, undrained
1 (14.5-ounce) can Mexican-style stewed tomatoes with jalapeño peppers and spices, undrained
6 tablespoons (1 1/2 ounces) shredded reduced-fat extra-sharp cheddar cheese

Cook the ground round in a large nonstick skillet over medium-high heat until brown, stirring to crumble. Add chopped onion and the next 7 ingredients (onion through garlic), and cook for 7 minutes or until onion is tender. Place meat mixture in an electric slow cooker, and stir in beans and tomatoes. Cover with lid, and cook on low-heat setting for 4 hours. Spoon into bowls; sprinkle with cheese.

Note: The chili can be made on the stovetop if you don't have a slow cooker. After adding the beans and the tomatoes, bring to a boil. Reduce heat; simmer, partially covered, 1 1/2 hours.

Yield: 6 servings (serving size: 1 1/4 cups chili and 1 tablespoon cheese)

Crockpot Pulled Pork
pork shoulder roast, about 4 pounds
2 medium onions, thinly sliced
1 1/2 cups water
1 bottle (16 ounces) barbecue sauce, or 2 cups homemade sauce
1 cup chopped onion
Place half of the thinly sliced onions in bottom of slow cooker; add pork and water, along with remaining onion slices. Cover and cook on LOW for 8 to 10 hours or 4 to 5 hours on HIGH heat setting. Drain liquid from slow cooker; place meat back in cooker
Add barbecue sauce and chopped onion. Cover and cook on LOW for 4 to 6 hours longer. Stir occasionally.

I have a crock pot too..and I'm lazy and thats why they invented the crock pot lol. I just buy the crock pot classics in a bag at the store in the freezer section. You can buy different brands and flavors but I usually get banquet because its cheap and still edible. I like the chicken and red skin potato kind. YUM!

u need a boneless pork roast and 1 16 oz jar of salsa an envelope of taco seasoning place ingredients in crock pot on top of roast cook on high for 6 hours serve with mexican rice or it is good on tortillas as shredded meat . its called mexican roast came from the three ingredient cookbook u can get in at barnes and noble

1 can (bottle) beer
1 envelope dried onion soup mix
1 4-5lb roast

Put in a crock pot and cook low about 5 hours or so.
Great on rolls with leftover sauce as au jus.

(p.s. taking the top off the crock pot elongates cooking time)

Refried Beans Without the Refry

This recipe will yield flavorful, fat-free refried beans seasoned with garlic, jalapeno, and cumin. Original recipe yield: 15 servings.
Prep Time:15 MinutesCook Time:8 Hours Ready In:8 Hours 15 MinutesServings:15

INGREDIENTS:
1 onion, peeled and halved
3 cups dry pinto beans, rinsed
1/2 fresh jalapeno pepper, seeded and chopped
2 tablespoons minced garlic
5 teaspoons salt
1 3/4 teaspoons fresh ground black pepper
1/8 teaspoon ground cumin, optional
9 cups water

DIRECTIONS:
Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine. Cook on High for 8 hours, adding more water as needed. Note: if more than 1 cup of water has evaporated during cooking, then the temperature is too high.
Once the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency.

My favorite is Beef Stew:

INGREDIENTS:
10 small new potatoes, halved, unpeeled
12 small whole white onions, peeled, fresh or frozen, thawed
30 baby carrots, 8 ounces
1 red or green bell pepper, seeded, cut into 1-inch pieces
1 1/2 pounds beef stew meat, cut into 1-inch cubes
2 cups beef broth
1/2 teaspoon dried leaf oregano
1/4 teaspoon paprika
1 tablespoon fresh parsley, chopped, or 1 teaspoon dried parsley flakes
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
3 tablespoons cornstarch
3 tablespoons cold water

PREPARATION:
Place potatoes, onions, and baby carrots in slow cooker. Add bell pepper and beef. In small bowl, combine broth, oregano, paprika, parsley, Worcestershire sauce, salt, and pepper. Pour over meat and vegetables.

Cover and cook on LOW 9 to 10 hrs. Turn pot on HIGH. In small bowl, dissolve cornstarch in water; stir into cooked stew mixture. Cover and cook on HIGH 15 to 20 mins. or until thickened, stirring occasionally.

killer ribs
add 1 bottle of your favorite bbq sauce ( we like the 1 with a touch of maple ) add your side or back ribs . let cook all day.
before serving reduce sauce. coat ribs and bbq or bake at 300 for 20 min
they will be the most tender thing u ever ate
