Yes it can do that. It is called hyperextending. Sometimes the ligaments, such as the anterior crutiate (ACL) becomes stretched allowing for some extra play in the joint. When you make a mis-step it can hyperextend. I hyperextended my knee in sports and tore my ACL in two. Take it easy and do some leg lifts and hamstring exercises to strengthen the muscles, tendons and ligaments and you should be fine.
