The mayo won't last 2 weeks. You're going to have to splurge on new potatoe salad or risk giving your guests food poisoning.

If, on the date of your next party, you open up the carton and it has a thick layer of mould on top and emits a horrible smell, I think it's safe to say you should probably buy a new one. Better buy a new one anyway ... just to be on the safe side. BUT!! not today! It will just go off too and you will have to buy a new one all over again. And have to spend even MORE money. Cheapskate.

You could try sealing it and freezing it in an air tight container. If u keep it in the fridge it WILL go bad before that part and make alot of people sick. I wouldnt take the chance on anything with mayo- throw it out and start fresh. I know it seems like a huge waste- but its better safe than sorry!

You can't possibly keep it fresh for that long. You cant freeze it because of the mayonaise. I'm afraid that it would last a week at the very most under refrigeration. You'd be better off giving some of it away before it spoils, and making fresh for your next party.

Make sure it is sealed tight with all excess air out of the container. Turn the container upside down and store in your refrigerator. I store my cottage cheese and sour cream this way.... It lasts twice as long and tastes fresh!

Use by date is good if you didn't open it. Once it's opened, you have maybe a week to eat it.
Eat it up or give it away. Buy new for your next party. You don't want to give your guests food poisoning.

Just keep them in the refrigerator. The salad will last about 10 days past that due date. So no worries and have a great time at your party!
