I started this cake decoration class and next week have to make a cake with filling between the layers. It can be any flavor of cake too.

Make a basic chocolate cake and use cream cheese filling! I brought this to "cake day" at school and it was an award winner

filling ingredients:
-1 pack Philly cheese
-1 egg
-1/2 cup sugar (depending how sweet your choc cake is)
-1 cup semi-sweet chocolate chips

method:
-cream the cheese and sugar high speed using the dough beater of the mixer, add the egg, then fold in choc chips
-just as the chocolate cake batter is placed in the Pyrex and ready to be baked, drop the cream cheese filling by the spoonful and let it sink to the bottom

I live in NJ and go to the yellow cottage off of 206 by Branchville and buy a Brown Derby cake. This cake has all types of fruits in it. This is one of many recipes but the contents explains it all

I hope you like it if not good luck on your quest.

Devils food cake mix, (maybe enough for two full cakes)
1 Quart heavy Cream
1 Peeled pear
1 Peeled peach
1 Peeled banana
1 Peeled kiwi
Half dozen strawberries
Cup of cherries
chocolate shavings
cocoa

1. Find or make from scratch your favorite devils food cake mix

2. Bake three layers 1.5 to 3 inches thick (accounting for the rise) in 6 or 9 inch ROUND cake pans. butter or grease the pan.

3. While that's baking, whip up 1 quart of heavy cream/ sweeten if you like

4. Cut your favorite fruits in large sections. They don't have to be exactly flat because all spaces will be filled with the cream/ This is my suggestions, pears, peaches strawberries, bananas, kiwi, and cherries. anything you like.

5. Take cake layers out and cover 1st layer with fresh whipped cream, top with fruit, cover with more cream,

6. Put next layer on top, cover with fresh whipped cream, top with more fruit, then more cream.

7. Put the last layer on top and carve it round with a sharp knife like a Derby

8. Cover the whole thing with more fresh whipped cream and take the cake that you carved off in step 7, crumble it and sprinkle all over till covered

9. Top with shaved chocolate, and dust with cocoa

10. Chill immediately and serve soon

Lemon cake with lemon curd inside is yum, so is a Victoria sponge with jam and cream in the centre.
Either would be great at this moment with a cup of tea, but I'm gonna have to settle for a biscuit! Good luck with cake class!

I would make a simple lemon or vanilla cake. As a filling, I would use nutella with chopped hazelnuts and to make it a little heavier I'd add some whipped cream.
for the other layer, I would use a coffee chocolate mousse.

A strawberry rhubarb coffee cake recipe.
INGREDIENTS:
Filling:
3 cups sliced rhubarb, (1 inch pieces) fresh or frozen
2 pints fresh strawberries, mashed
2 tablespoons lemon juice
1 cup sugar
1/3 cup cornstarch
.
Cake:
3 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, cut in small pieces
1 1/2 cups buttermilk
2 eggs
1 teaspoon vanilla extract
.
Topping:
1/4 cup butter or margarine
3/4 cup all-purpose flour
3/4 cup sugar
PREPARATION:
In a large saucepan combine rhubarb, strawberries and lemon juice. Cover and cook over medium heat for about 5 minutes. Combine sugar and cornstarch; stir into strawberry rhubarb mixture. Bring to a boil over medium heat, stirring constantly until thickened; remove from heat.

pieces of dryed fruit , ginger, (red pieces of cherries, green are made of...?) this is a real English cake. In fact, you have to make it 2 weeks before serving, it need to be a bit old :P (LOL)

Any flavour of jam, sweetened Philadelphia cream cheese, whipped cream, cool whip, chocolate spread, depends on the flavour of the cake.
