It is made with white cheese (perhaps American cheese- as strange as that sounds) and comes with or without jalepenos in it. It's SSSOOOOO good!

WHITE CHEESE DIP
2 cups of shredded white American cheese.
1/3 cup scalded whole milk (Pet evaporated will work)
1 to 1 1/2 Tbsp finely chopped Jalapeno peppers per cup of cheese.(or less)

Heat the milk until it just begins to simmer (not a rolling boil) remove milk from the heat immediately. (scalded milk) Pour over shredded cheese and stir well. Add Peppers and place back over a low to med heat and stir until heated through and silky smooth.

What you call Mexican is really Tex-Mex.

Here is my favorite

1 box [16 oz.] Velveeta, cut into chunks [under one inch per side]
1 can Ro-Tel tomatoes with jalapenos
1 lb. drained ground meat. Browned Italian sausage is a great alternative
1/2 cup milk

Mix all together into a goop and stick in your crock pot until melted

Yummy!

You can use any processed cheese - there are a few white processed cheeses. I have also made the above recipe with 8 oz. Velveeta and 8 oz. cream cheese and it was really good.

Mexican White Cheese Dip

1 cup Monterey Jack Cheese
1/4 cup half-and-half
2 tablespoons onions, chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 Serrano pepper, chopped fine (optional)
1 tablespoon fresh cilantro, chopped fine (optional)

Put all ingredients in a double boiler and heat on medium. Cook until melted, stirring occasionally.

2(8oz)pkg. cream cheese (room teperature) 1 (8oz) bottle mild taco sauce 2 green peppers diced 2 tomatoes diced 3 scallions diced 1 can black olives sliced 1 8oz pkg monterey jack cheese shredded . Spread cream cheese evenly over a small pizza pan or tray. add taco sauce on top and spread evenly. sprinkle remaining ingredients in order as they appear on recipe. cover and refrigerate. remove from fridge 2 hours before serving.
