As any Chef will tell you a good quality set of knives are one of the most important things. A wide chef knife if the most useful. try to get one that has small indentation above the blade. This helps food to release or not stick to the blade and you have to keep them sharp too. Soaking the potatoes in some warm water after they are peeled will soften them a little bit too.
Another thing you might look at is getting a Mandolin. It's a slicer that can make fairly thick cuts and had different blades for different styles. A good one can make a pretty impressive number of cuts. Any good kitchen store will have them and they're not too expensive. A good compromise if you don't have really good knife skills.

I suspect it has nothing to do with the knife, rather holding it still to cut. Walmart and other stores sell a product that holds potatoes, tomatoes, onions, etc in place and have guides to cut straight all the way through. If you can't find it in your area go online to pampered chef to order online.

Try using a fork when cutting.
Or if you're trying to cut even slices, while holding the potato with your left hand, space the slices with the knuckle of your forefinger while slicing.

forget those answers...when cutting a potato cut the edge off so you have a flat surface to work with and then slice it up

You probably either need to sharpen your knife or buy a better quality knife.
I find that a larger blade knife....like a chef's knife....makes it easier to cut potatoes and carrots and other things that are difficult to cut than...say....a steak knife.

get a good knife. Serrated might work better than the sharp edged ones that tend to slip.
